Comments: I absolutely love this recipe. This year I will make it with a touch of rum in the filling and top it with caramel sauce drizzled over the pie, add dabs of Kool Whip and crush some gingersnap cookies and sprinkle over the Kool Whip to fancy it up a little for our Thanksgiving Dinner. |

Comments: I have been making this pie for over 20 years. My family won't let me make any other pumpkin pie as this is light, but firm. I still remember the first time I made it, my kid's great aunt wasn't going to try it as it wasn't the traditional pie, and when she did try it she was hooked. And don't forget to try the other Impossible Pies - mmm good. |

Comments: I had made this recently, having found some canned pumpkin in my pantry. This is the second time I made it. First time I followed the recipe exactly and it was good. This time I added 1/2 tsp. cinnamon and 1 tsp. rum extract. Served with a dollop of whipped cream and a small drizzle of maple syrup over top it was even better this time. |

Comments: My favorite part of pie is the crust, if done right. My family, however, are not fans of crust. This is the perfect blend of both, as I am not a pumpkin pie eater. Absolutely fabulous!!! |

Comments: I've made this pie every Thanksgiving and Christmas dinner for at least the last 20 years. About 10 years ago I moved to North Carolina where I met and married my current husband, who LOVES sweet potato pie. I wrote in to ask your help in modifying the recipe to make sweet potato pie, but never received a response. Well, it took me a few tries, but I have successfully modified the recipe for sweet potato pie!!! Both pies are a hit at pot luck gatherings at work! |

Comments: I made this for a large crowd on thanksgiving. It was very firm so I cut into triangle pieces, like a bar cookie and then topped each with a small dollp of whipped cream. It was anice presentation. I would probably increase the cinnamon, that's it! Travels and keeps well. We even froze some of the leftovers and served them later in the holidays on a sampler platter with other pastries. |

Comments: I made a total of 4 of these of the Holiday season. The first two cook in the 30-40 min that it said. But the other 2 didn't...the difference was that I ran out of condensend milk and used regular milk as a substitute and it took 1 1/2 to cook...but didn't burn. But all four were extremely good. If you going to make it, then it's worth finding condensend milk to save on cooking time. |
