I love Reuben's. This was okay, but probably because I don't think I had enough corned beef in it. I'll try again. Since I'm only cooking this for myself, I used a single pouch of potatoes. Made as directed on the pouch (herb & butter style). Also added mustard to the water before mixing the potatoes in. I layered as in the recipe. Put thousand island dressing on top of the sauerkraut. Next time I'll used more corned beef. Thanks for the idea of this recipe.

We like this recipe a lot. I am trying the double batch right now. Question though, did y'all add cooking time when doing the double batch?

After reading the reveiws I did double the recipe but did not double the potatoes as just the single batch is more than enough. I did pour 1000 island dressing over each layer (potatoes, corned beef, sauerkraut, 1000 dressing, corned beef, sauerkraut, 1000 dressing and then topped with potatoes and swiss cheese). Next time I will use more mustard and maybe add some horseradish. The recipe is really good just as is -- just way too many potatoes if you don't double the recipe.

This was amazing! I was worried at first but the husband and kids like things like this so I thought I would try it. It was great LOTS of flavor. I doubled it, so i doubled everything. I layered it first with the potatoes then meet krout and cheese and then did it again ending with 3rd layer of potatoes and cheese. It was a big hit.

This is fantastic for a quick dinner. I substitute 1 lb of smoked sausage for the corned beef as it is more affordable. I also put a bit of Thousand Island dressing on when serving. Great!

This is the absolute BEST if you love reubens. I used cooked corn beef that I cook the day before in the crock pot. Then shredded it on the top of the potatoes for the bottom layer. In the potatoes I used French's horseradish mustard. I used a slice of marble rye bread on the bottom and thousand island dressing on the top. DELICIOUS!! Even better the second day!

My husband and I found this recipe to be good. A nice change from the sandwich and with some grilled vegetables it was a nice dinner. I added some cheese,and caraway seeds to the middle as well, it added more flavor.

This anice chanage from the saame old casseroles. I used Potatoes O'Brien that I browned on the stovetop first. I also used turkey kielbasa. Also I put some creamy horseradish-becareful! a little goes a long way. Overall I thought it was good w/ my changes. :)

Not a big fan of corned beef, so I use Polish sausage. Ham would work also. This is a favorite of mine.

The night I made this, my husband said "don't waste your money on this again". He took the leftovers to work and came home telling me "it tastes better the second day". He took it again for leftovers the following day (I doubled the recipe) and came home BEGGING me to make it again. We had a potluck at church last week and I took this and had people ask for the recipe. BIG TIP #1: prepare this in the morning or night before (without cooking) so the flavors blend and then cook it when ready to eat--MUCH BETTER BIG TIP #2: add thousand island dressing to recipe BIG TIP #3: if doubling, double everything BUT the potatoes

If the sign of a good recipe is if and when you pass it on to your closest friends...then this one is a winner. If you are a lover of Ruebens this is a must try

I love German food, but this was quite bland. There's also a few descrepancies in the ingredient list verses the directions (mashed potatoes). I tried adding some extra butter and also salt and pepper but it was still bland and ended up going out to dinner instead. AND, the amount of food doesn't fit into an 8"x8"x2" pan.

At first I had second thoughts, but my sons and Husband really love Runbens so I thought why not give it a try....so I did , and let me tell you .....WONDERFUL...! So easy, and quick and tastes just like a Ruben should. If you like Rubens you should give it a try!

Absolutely delicious! Everyone loved it, from my 10 year old daughter to my 81 year old mother. My only change was I didn't add the mustard to the potatoes. I didn't measure the mustard, but instead drizzled it with the squirt-top bottle directly over the corned beef before layering on the saurkraut.

We loved this recipe. Had to spread on a layer of Thousand Island dressing though. A Reuben isn't a Reuben without Thousand Island dressing!
