Comments: Loved it! I added a can of rotel for a little more flavor. I also could not find mexican corn, so i substituted it with a bag of regular frozen corn and a pepper blend. Everyone loved it! |

Comments: Super duper easy and fast to make, but a little on the bland side. I definitely felt it needed a little something extra so ended up adding 1/4 cup medium salsa, dash of salt substitute, dash of hot sauce and a few red pepper flakes. (I suppose mine could have ended up a little bland because all the grocery store had was "Cheesy Taco Seasoning" packets) Served on small whole wheat tortillas-yum. |

Comments: This recipe was fabulous. It was a great way to increase the nutritional value of a Mexican dish. My kids loved it. I used frozen corn instead of canned to decrease the sodium in the dish. Definitely will make again. |

Comments: I doubled up the meat, water and taco seasoning to this recipe and added a large can of red kidney beans. I also felt it needed some salt.
It was good the first day, absolutley delicious the 2nd day-reheated. I shredded a little bit of old cheddar on it and it was yummy! I thought the tortilla was a nice idea but found it substantial enough on it's own.
Ole! |

Comments: Came out pretty good. My husband put his in a tortilla and made a burrito. Next time I'll get guacamole and sour cream. So easy and it's pretty tasty as a leftover. I'll make it again. |

Comments: I was pleasantly surprised by this recipe. I thought it would be too spicy for my taste. It was just right. If you wanted it spicier you could add hot salsa. I used frozen corn and cut up some red pepper because I couldn't find mexicorn and kept the liquid in the black beans and added a tablespoon of mild taco sauce and the consistency was perfect. At the end I added 2% tex mex cheese and served it in a tortilla wrap. I would definitely make this several times!! |

Comments: This is a terrific recipe! I added about a half of a can of tomatoes w/juice and left out the 1/4 cup of water. I also added a little chopped green pepper and garlic and frozen corn and topped it with a little shredded cheese and sour cream. Delicious! Next time I plan on using the veggie/soy imitation chicken strips, as several family members are vegetarians. Thanks! |
