Loved it! I added a can of rotel for a little more flavor. I also could not find mexican corn, so i substituted it with a bag of regular frozen corn and a pepper blend. Everyone loved it!

Super duper easy and fast to make, but a little on the bland side. I definitely felt it needed a little something extra so ended up adding 1/4 cup medium salsa, dash of salt substitute, dash of hot sauce and a few red pepper flakes. (I suppose mine could have ended up a little bland because all the grocery store had was "Cheesy Taco Seasoning" packets) Served on small whole wheat tortillas-yum.

This recipe was fabulous. It was a great way to increase the nutritional value of a Mexican dish. My kids loved it. I used frozen corn instead of canned to decrease the sodium in the dish. Definitely will make again.

I doubled up the meat, water and taco seasoning to this recipe and added a large can of red kidney beans. I also felt it needed some salt. It was good the first day, absolutley delicious the 2nd day-reheated. I shredded a little bit of old cheddar on it and it was yummy! I thought the tortilla was a nice idea but found it substantial enough on it's own. Ole!

Came out pretty good. My husband put his in a tortilla and made a burrito. Next time I'll get guacamole and sour cream. So easy and it's pretty tasty as a leftover. I'll make it again.

I was pleasantly surprised by this recipe. I thought it would be too spicy for my taste. It was just right. If you wanted it spicier you could add hot salsa. I used frozen corn and cut up some red pepper because I couldn't find mexicorn and kept the liquid in the black beans and added a tablespoon of mild taco sauce and the consistency was perfect. At the end I added 2% tex mex cheese and served it in a tortilla wrap. I would definitely make this several times!!

I made this dish for my 15 year old daughter and her friend and they loved it. Incredibly quick, cheap and delicious. One of my new favorites. Very good over white or brown rice also.

This was an incredible, fast, cheap dish! Rather than tortillas I stuffed it in hard taco shells. It was very tasty! Even my picky 2 year old loved it!

This was so easy and so good! I used plain corn instead of the mexicorn, but added extra taco sauce for flavor, served it with flour tortillas. I was a hit with my husband! I will make this again for sure!

This is a terrific recipe! I added about a half of a can of tomatoes w/juice and left out the 1/4 cup of water. I also added a little chopped green pepper and garlic and frozen corn and topped it with a little shredded cheese and sour cream. Delicious! Next time I plan on using the veggie/soy imitation chicken strips, as several family members are vegetarians. Thanks!

I made this twice. Once with the chicken and once with stew beef and added more tomatoes. Served both over rice. Both were a hit at home and at work. Thanks for great recipes!.
