Made it tonight. It was fantastic. Did put more seasoning on hubby's and less on mine based on personal preference and upped the salsa a little. Easy and fast.

I made this for my boyfriend and he absolutely loved it. Very quick and easy, not a lot of steps and it was very tasty. Great recipe!

I also added shredded cheese, changed the salsa to 1 cup but used Mango salso mixed with regular salsa and cumin and no salt because of dietary restructions. Whole family loved it. Also used pita bread wraps the 2nd time around with cheese in liquid and wraps like lasagna in liquid, cheese on top and baked for 30-40 min. 350 deg.

I made this last night. It was easy,fast and really good. I did substitute the black beans(none in the cupboard) for pinquito beans. Also added some shredded cheese. Yummy! Definately will make again.

This is definately a keeper. My husband loved it, compared it to stir fry we make. He loves anything over rice so it will be made again and again.

Loved, loved, loved this chicken recipe. I spent the summer doing very light dinners and was ready to get back into new "meals". This one was delicious and even my 11 yr old son loved it...who can be picky. My husband asked if I could make it again this week! haha

I made this meal a couple days ago and was suprised how quick and tasty it was. Along with the other reviews, I would add a little more salsa (I increased it to 1/2 c.). If you have kids that are anti-spicy, reduce the chili powder to 1 tsp. or less. To please my toddlers, I molded the rice into little "doggie bowls", diced the chicken and put the chicken & veggies into the "bowl". The little puppies gobbled it up! A great dish for the whole family.

WOW! Just tried this for the first time, and it was GREAT! Very tasty, straight-forward and easy to make. I used more than 1/3 cup of salsa...and I'm glad I did. I'm in NO WAY an expert, much less experienced in the kitchen. But my stock has risen with this simple, tasty dish! I'll DEFINITELY be making this again.

This was flavorful and delicious!!! I rubbed the chicken with the specified seasonings the night before and it was full of flavor the next day. I used brown rice seasoned with chicken broth and garnished it with a spoonful of the salsa which was awesome. My husband took it for lunch the next day and texted me 3 times with compliments!

LOVED this recipe. The only item I changed was I used 1 cup of salsa instead of 1/3 of a cup. It was really juicy and lots of flavor. Will make it again!

I doctored this up a bit, too. I put about a 1/4 teaspoon of cummin into the rub, used kosher salt so I added a bit more. Also, cut the chicken into large pieces (4 per cutlet). Put everything in a bag and made sure all the pieces were coated. I used frozen corn (thawed), half a fresh red pepper, and half a jalepeño. Cut them into small, but not minced pieces. Because I used a larger frying pan I added some stock to the mixture when it was cooking - just enough to keep things wet to boil and simmer. Finally, I used brown rice made with chicken stock, not water. Adds great flavor. Corn bread would be a terrific addition to this meal!

well I went with what the recipe said but I used Hot Salsa and I always used the spanish rice recipe on this web site to go along with it. We liked it a lot

Easy to make, great tasting, wonderful treat. I strongly recommend to anyone who enjoys chicken flavorful dishes. I would add a little more salsa so it is a bit wetter. My husband loved it the way it was. Super, I will absolutely try your other dishes. Keep them coming - you're one of the best on the internet.

My family LOVED this chicken!!!! It is so easy to make and just spicy enough. The corn and beans side was a big hit. The chicken is also very delicious cold the next day!!!
