Cooking the Tagine Way

Is it cookware? Is it a recipe? Is it a cooking style? Tagine (pronounced tay-jean) is slow-cooked way of preparing foods used in North Africa, notably Morocco, and the name given to recipes for them. It is also the name of the cookware, a shallow ‘casserole’ with a distinctive conical lid.

  • The conical shape of the lid acts like an oven when cooking, much like Dutch ovens do. In fact, a Dutch oven is a good substitute.

  • Look for tagines in cookware stores or online sources for serious cooks.

  • The most versatile can be used in the oven or for stovetop cooking and will come with good recipes and ‘how to’ directions.

  • Be a careful shopper. Some tagines are for serving only.
