Grilled Bourbon Chicken
One of my husband’s all-time favorite dishes is bourbon chicken, a sticky, sweet dish served at Chinese buffets and the like. I’ve had it and have to say that it is good. But the breading? And the cloying sauce? Not anything I crave. Frankly, I like my dishes to be a little leaner and healthier. However, the flavor that bourbon brings to the dish—a bold richness—is amazing. So I turned my husband’s favorite bourbon chicken on its head by using the bourbon in an easy marinade for chicken. Gone is the sweetness, but what’s left turns ordinary chicken into something extraordinary.

Oh, is it good.

The great thing about this dish is that the marinade takes only a few minutes to whip up. Then the chicken marinates for about an hour before being grilled in less than 20 minutes. All in all, you could make this after work with minimal effort. Heck, you’ll even have time for a leisurely glass of bourbon before cooking, if you are so inclined. Serve this over rice with a nice green salad. Give it a try...you won’t be sorry!
