Roasted Beet Pizza

Jump start pizza night with a recipe featuring brilliant beets and delicious white Cheddar.

When it comes to eating vegetables, I’m definitely more about the flavor than the nutrition. That is to say, while I know veggies have health benefits, I let my taste buds (not my brain) do the choosing in the produce section. 

But when it comes to roasted beets, there is no compromise. They are packed with dietary fiber, folic acid, only 60 calories per cup and unparalleled taste to boot. So I can rest assured that when I make a recipe with beets, my entire body benefits. And my taste buds are happy, too! This recipe is just one way I bring nutrition and flavor to the table in one bite. Here’s how to make it. 

First, set out all of your ingredients and chop, slice and measure.

To roast your beets, lay slices on a baking sheet, drizzle with olive oil, sprinkle with salt and bake. Aren’t they pretty? Roasting beets softens them up and brings out their earthy flavor.

Next, prep your pizza. Roll out the crust and top with olive oil, salt, cheese, spinach and beets.

Top with thin shavings of sharp, tangy white Cheddar.

Bake the pizza until the crust is golden brown and the cheese is melted and bubbly. This is one nutritious and delicious pizza that can’t be "beet"!
