I always thought that when my husband and I decided to eat mostly vegetarian (“flexitarian,” if you want a fancy term for it), I would crave meat constantly. Isn’t that how it always goes? The minute you give up sugar, all you can think about are brownies. As soon as carbs go out the door, you’re dreaming of sandwiches and dinner rolls in your sleep.  

That’s how I thought it would be anyway, until I discovered that some meatless recipes, like these Button Mushroom and Caramelized Onion Tacos, taste so much like a meaty meal that you don’t even notice the difference! The mushrooms are hearty and savory, while the buttery, caramelized onions render a flavor so delicious, you won’t even miss the meat.
