I absolutely love angel food cake. It’s light airy and guess what? It’s fat free! So I can feel good about eating a few extra slices right?

I also love all things lemon. Including Lemon Pudding Cake. Traditionally it’s made with a yellow cake as the base. I’ve switched things up and used angel food cake instead. It’s light delicious and you won’t miss any of the extra calories.

It’s perfect for spring and summer and you can change up the berries. Strawberries, blackberries or raspberries would be fantastic.

I love making mine in individual portions (hello mini bundt pans) and the hole in the center of the angel food cake is perfect for filling with the luscious lemon pudding. It comes together very quickly and is equally as beautiful as it is tasty!
