Baked Quinoa "Mac" & Cheese

This super grain adds a healthier twist to this classic comfort food.

I have to admit that for a self-professed foodie, I am not one to try new foods enthusiastically. That doesn’t mean I won’t take the plunge. It’s just that I often do so with a hefty dose of apprehension.

Such was the case when I first heard of quinoa (pronounced “keen-wa”). But I’m so glad I went for it! This tiny little seed is bursting with both flavor and nutrition, like fiber and iron. (Bonus: It’s gluten-free.) You can use quinoa as a replacement for rice and pasta in your favorite dishes, including classic mac ’n’ cheese.

Here’s how to serve it up. First, have all your ingredients measured, chopped and ready to go.

In a large saucepan, cook quinoa and veggies until the quinoa is translucent and slightly browned but still undercooked.

Fill the saucepan with water. Cover and cook until most of the liquid is absorbed.

Stir in the yummy shredded cheese along with milk and eggs.

Bake until golden brown and crispy.

Scoop into serving bowls and top with extra shredded cheese and your favorite toppings, like sour cream and chopped scallions.
