Roasted Bacon-Wrapped Pear Salad

Bring fall to your table with the sweetness of a pear wrapped in bacon and brushed with maple syrup.

Salad is often overlooked on Thanksgiving.  With so many side dishes and the beautiful bird fighting for attention it is almost an afterthought.  I think a salad adds a light and refreshing bite to a big meal. Once I made this Roasted Bacon Wrapped Pear Salad I immediately added it to my Thanksgiving menu for this year.

I discovered the goodness of roasted pears a few years ago.  Roasting them adds a subtle sweetness and creates a simple treat where sweet or savory.  Stuff them with creamy goat cheese, wrap in bacon and brush with maple syrup to create a beautiful warm fall salad. The maple soaks in with the bacon juices to create a sweet savory bundle to place on top of your favorite mixed greens.

For roasting I love to use red pears but Bosc and Anjou work well too.  Make sure they are still firm to the touch or they will get too mushy in the cooking process.  Slice the pears in half and core them.

Stuff them with about a tablespoon of goat cheese and wrap in a slice of bacon.

Place on a rack sitting on a baking sheet and roast in the oven for about 30 minutes until the pear is softened and the bacon is cooked.

I made a Maple Cider Vinaigrette to toss the greens in and sprinkled toasted pecans over.  Place the pear on top of the greens to create a beautiful salad plate to serve our guests.
