Salads on the Side

The salad might not be the main dish for your dinner tonight, but here are some ways to make sure it holds its own.  From greens to garnish, enjoy eating your veggies as much as your main dish.

Salads on the Side

Go beyond a bag of lettuce or a complete salad mix with one of these simple—and less expensive—taste sensations!

  • Hearts of Palm Salad: Drain and slice canned or jarred hearts of palm; drizzle with your favorite vinaigrette dressing.
  • Cukes and Tomatoes Salad: On a serving platter or individual salad plates, arrange cucumber chunks or slices with tomato wedges or slices.  Sprinkle with salt and pepper; drizzle with your favorite dressing or add a splash of vinegar.
  • Mediterranean Vegetable Salad: On a serving platter, arrange sliced tomatoes and sliced bell peppers; drizzle with your favorite vinaigrette dressing.  Top with pitted kalamata olives or small whole pitted ripe olives; sprinkle with crumbled feta  cheese.
  • Melon and Berries Salad with Vanilla Sauce: On a serving platter, arrange sliced cantaloupe and honeydew melon; top with raspberries or blackberries.  Mix together vanilla yogurt and milk until it has a saucy consistency; drizzle over fruit.
  • Sunny Lime Fruit Salad: Drizzle a variety of cut-up fruits with thawed frozen limeade concentrate.  Toss in poppy seed or slivered almonds if desired.
