Fall Harvest Veggie Pizza is just one simple and easy way to get your family following the Meatless Monday trend without sacrificing flavor.
I remember the first time my family decided to join the push for Meatless Mondays, where all the meals on Monday are meatless. For weeks, we ate pasta, grilled cheese sandwiches and cheese pizza until we just couldn’t take one more bite of the same-old foods!
The challenge then was to not only go meatless for a whole day once a week, but to keep those Monday recipes fresh and healthy.
Over time, we’ve learned how to not only make it through our Mondays without meat but to also look forward to those meals together. One of my favorite meat-free recipes is this easy Fall Harvest Veggie Pizza. With in-season vegetables (and fruit), it has an incredible combination of sweet and savory that packs a serious punch of flavor and that fills us up.
You’ll never even miss the meat. Plus, it’s super easy to make.
I know what you’re thinking...squash, apples and Gorgonzola cheese on top of a pizza? It might sound a little crazy, but trust me. With sweet squash, tart apple and tangy Gorgonzola—along with caramelized onions, creamy white cheddar cheese and crunchy arugula, if you like—it is a deliciously unique blend of fall flavors. What better way to start your own family on the Meatless Monday trend?
Not sure you’re ready to go meat-free? Here are some tips to ease the transition:
- Swap the meat in recipes with meatless substitutions, like vegetarian “meatballs” or crumbles, which can be found in the grocer’s freezer section. Many quality brands taste just like the real thing.
- Tofu, beans, eggs and cheese all contain protein, which is often lacking in a meat-free diet. Try new meat-free recipes that include these ingredients, or revamp your family favorites using these items in place of meat.
- Pack fun and healthy meat-free treats in your kids’ lunch boxes. Ideas include fruit kebabs, ants on a log or cheese slices cut out into shapes, like stars and hearts.
