Easy Huevos Rancheros

Jump-start your weekend breakfasts (or even weeknight dinners) with delicious mouthwatering Mexican-style eggs!

My family loves a big breakfast. I often don’t have time to make homemade breakfasts during the week, but I almost always make breakfast on the weekends and at least once a week for dinner. Having breakfast for dinner is a tradition my mother started when I was a kid. Not only is it fun, but eggs are a super cheap form of protein.

Since we love breakfast so much, I like finding new ways of serving eggs. This is my version of the traditional Mexican dish called huevos rancheros. It’s simply a lightly fried corn tortilla topped with refried beans and a fried egg.

The fresh salsa, also known as pico de gallo, is just chopped tomato, onion, garlic and cilantro. I make that first and set it aside. Then I heat my beans and lightly fry my corn tortillas in olive oil. After the tortillas are cooked, I fry the eggs. To assemble, spread the refried beans over the tortillas and top with eggs. Then I garnish with my fresh salsa, avocado slices and queso fresco.

It’s a very economical dish that not only makes a great breakfast but also a very frugal and fabulous dinner.
