Orange Cream Poke Cake

Created January 10, 2017
Easily capture the flavor of a classic ice cream bar by infusing a mouthwatering cake with delicious citrus flavor and fast-to-make creamy topping.

Growing up, I always reached for creamy orange ice cream bars in the freezer at the local corner store. The flavors of this Orange Cream Poke Cake bring back memories of those treats. Just what is a poke cake? It’s a cake you poke holes into and then pour flavored gelatin over. It’s a cool, creamy dessert that is so refreshing to eat on hot summer days!

To make it, start with a Betty Crocker® Super Moist Vanilla Cake Mix and prepare the batter as directed.

Pour into a 13x9 pan and bake for 28 minutes or until firm to the touch. Cool.

This is where it gets fun and the kids eagerly jump in to help! Using a wooden skewer or a fork, poke holes in rows 1 inch apart in the top of the cake.

Mix orange gelatin with 1 cup boiling water; stir in 1 cup cold water. Pour over the cake. Cover and refrigerate for 2 hours.

Mix the pudding, gelatin, orange juice and milk; fold in whipped topping. Frost the cake and refrigerate.

When you cut the cake, you see swirls of orange gelatin, which makes the cake super moist and burst with flavor. The pudding and milk in the topping give a rich and creamy taste. Yum!
