Make breakfasts brilliant with lemony coffee cake muffins.
For me, coffee cake brings back memories of my grandma, who would make every kind of coffee cake under the sun. My favorite was her sweet cinnamon cake with a crunchy streusel topping. Grandma would spend hours baking those from-scratch goodies, but I don’t have that luxury. So when I’m in the mood for the flavor of coffee cake, I take a shortcut with Betty Crocker® cinnamon streusel muffin & quick bread mix. I make it my own by adding the zest and juice of a Meyer lemon and then quickly bake the batter in muffin tins for breakfast treats in no time!
Meyer lemons (a cross between lemons and mandarin oranges) are everywhere right now, and their sweeter citrus flavor is a great complement to these coffee cake muffins. If you’d like more of that sunshine flavor in this recipe, bump it up with even more lemon juice or peel. Better yet, serve the muffins alongside lemon curd. (I can’t get enough of lemons, so bring on the curd!)
