Cannoli Cupcakes

To make an easy at-home version, I turned to Betty Crocker® FunDa-Middles™ Cupcake mix. The simple chocolate cupcake with a cream filling was similar to the bakery’s version but super easy to make. The cream bakes right inside the cupcakes. So once they are baked and cooled, you are all ready to frost them.

But instead, these cupcakes gets cannoli-ized (okay, maybe I made that word up) with a simple homemade vanilla cannoli cream. It won’t stiffen like a frosting usually will, but that’s okay. It totally stays put. Finally, the cupcake is topped with a big ol’ dollop of homemade chocolate ganache. It’s a beautiful combination. When chilled, the ganache turns into a velvety truffle-like topping. Divine!

These cupcakes? They are a total treat. I baked ’em up for my sister’s birthday. But they would be great to celebrate any number of occasions. (Thursday is an occasion, right?!)
