Boozy French Toast Cups for Brunch

Growing up, I remember my Dad being so bright and cheerful in the morning. One of his favorite things to do was make us breakfast. Homemade breakfasts weren’t just a weekend thing, though. They were an everyday event. No brightly colored cereals or instant breakfasts in our home! We always had French toast, pancakes, eggs and bacon, oatmeal, or sausage and biscuits. It was such a nice start to the day.

Of all those beautiful breakfasts, my Dad’s French toast was the one I loved most. It was actually the first recipe I learned to make. I still enjoy making French toast every chance I get. I have made it so many different ways, but this is one of my favorites because it’s filled with amaretto, a liqueur I really like. Plus, the cups are just so adorable!

To make them, I use day-old French baguette. Using a baguette gives you smaller slices that fit nicely into large muffin tins. First soak the bread in a mixture of egg, milk and amaretto.

Place one slice of bread in a muffin cup; sprinkle with a little cinnamon. 

Add another piece of bread and sprinkle that with cinnamon.

Next, add three pieces of bread to the top and sprinkle with cinnamon. Cover with some sliced almonds. Bake in a 375° oven for about 15 minutes.

Serve with warm maple syrup and fresh strawberries or any other fruit of your choice.
