Seeding a Chili

Cut the stem end off a chili (such as a jalapeño), cut the chili lengthwise in half and scrape out the seeds. The flesh, ribs and seeds of chilies contain irritating, burning oils. Wash hands and utensils in soapy water or (wear plastic gloves) and be especially careful not to rub your face or eyes until you've washed away the oils.
