This easy-to-grow, round root vegetable has a white skin with a purple-tinged top. Turnips have a slightly sweet taste, but beware--with age, they become woody in texture and strong in flavor. The greens are also edible and have long been popular with soul food preparation.

How to Buy

Choose turnips that are smooth, round and firm, with fresh tops.

How to Prepare

Cut off tops. Wash turnips; peel thinly. Leave whole, or cut into 1/2-inch pieces.

How to Cook Conventionally

Boil: Whole-covered 25 to 30 minutes. Pieces-covered 15 to 20 minutes or until tender.

Steam: Pieces-covered 15 to 20 minutes or until tender.

How to Microwave
