Keep “large pencil-size” in mind when you look for green onions in the supermarket. Also known as scallions, green onions have a white base that has not fully developed into a bulb and green leaves that are long and straight. Both parts are edible raw or cooked.
How to Buy
Choose crisp green tops; 2 to 3 inches of white root.
How to Prepare
Wash onions; remove any loose layers of skin. Leave about 3 inches of green tops.
How to Cook Conventionally
Boil: 8 to 10 minutes or just until tender.
Steam: 8 to 10 minutes or just until tender.
How to Microwave
Add 2 tablespoons water. Microwave 1 to 2 minutes or just until tender.
How to Store
Wrap in a plastic bag and refrigerate in the vegetable crisper up to 5 days.
