Made from salted fish, this brown sauce is a seasoning to use sparingly. Sometimes sold as nuac nam, it is used throughout Southeast Asia, particularly in Thailand and Vietnam, to add a seafood flavor to a variety of dishes. It is related to the ancient Roman seasoning garum, the liquid skimmed from a vat of fermenting fish.
