A pale yellow, semisoft cheese that's brick shaped. Its flavor is mild and sweet when young; when it ages, the flavor becomes savory with a spicy tang. Made in Wisconsin in the U.S., brick cheese got its name because, it's said, bricks were once used to press the whey from the curd.
