Cauliflower is part of the cabbage family and comes in the form of a large head with many small flowers on stalks. If you know cauliflower, you’d say it’s white, but it can be green or even a vibrant violet that turns pale green when cooked. The green leaves at the base of the head can also be eaten, but take note--they take longer to cook and will be stronger in flavor.

How to Buy

Choose clean, nonspreading flower clusters (the white portion) and green "jacket" leaves.

How to Prepare

Remove outer leaves and stalk; cut off any discoloration. Wash cauliflower. Leave whole, cutting cone-shaped center to remove core, or separate into flowerets.

How to Cook Conventionally

Boil: Whole-uncovered 10 to 12 minutes. Flowerets-uncovered 5 to 7 minutes or until tender.

Steam: Whole-covered 18 to 22 minutes. Flowerets-covered 6 to 8 minutes or until tender.

How to Microwave

Place flowerets in 2-quart microwavable casserole; add 2 tablespoons water. Cover. Microwave 8 to 10 minutes or until tender. Let stand 2 minutes; drain.
