Vanilla Pudding

Hi all!


Gosh, it's been awhile since I've been here!  Anyway, despite all the cookbooks I have, I can't find one single recipe for Vanilla Pudding!  I did copy one from BC, but it's for a combo chocolate & vanilla recipe.  I just really need a recipe for Vanilla Pudding!  Can anyone out there help?  Oh and by the way, the simpler the better.  I'm in a wheelchair and can't stand for too long.  I'm hoping for something that takes about as long as a chocolate pudding recipe (maybe about 45mins,).

CS, how great it is to see you again!  I have been worried about you and was hoping nothing was wrong.  I sure have missed you and hope all is well with you.  Please don't disappear on us again! LOL  What have you been up to?  Staying out of trouble, I hope? LOL



Vanilla Pudding
From Betty Crocker


1/4 cup sugar
2 tbsp cornstarch
1/4 tsp salt
2 cups milk
2 slightly beaten egg yolks or 1 well-beaten egg
2 tbsp butter or margarine
1 tsp vanilla extract


Mix sugar, cornstarch and salt in a 2-quart saucepan. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for 1 minute. Stir at least half of the hot mixture into egg yolks, then stir the egg yolk mixture back into the hot mixture in the saucepan. Boil and stir for 1 minute, then remove from heat. Stir in butter and vanilla. Pour into 4 dessert dishes and cool in refrigerator.


NOTES : If making pie, decrease milk to 1 1/3 cups.


Variations:
For Chocolate Pudding: Add 2 oz Unsweetened chocolate


For Banana Pudding: Add 2 Bananas, chopped


For Butterscotch Pudding: Use Brown sugar instead of white sugar and add 1 tbsp extra butter

Hi AC!  Wow, it's nice to be missed! Sorry for worrying you though!  I started my own internet based company and it's been keeping me very busy! It's not doing too well, so I'm constantly working, trying to figure out the right sale or promo to boost sales!  Aarghhh! It's been very frustrating! My husband and I finally went on the first vacation we've had for 8 years!  That was great and we had such a nice time!  The best part is that it's a time-share and we own it!  Kind of like owning a home! I just hope with Soc. Security and business picks up so I don't have to worry abouut those payments!

CS, how exciting to have your own business!  I hope you get lots of business!  I'm sure you have been very busy.  And how wonderful to own the time-share.  Hopefully it will pay for itself...and then some!


I'm glad y'all had a great vacation.  And speaking of vacations, we are at the lake right now in the RV.  We spent the afternoon and early evening out on the water and it was hot but so much fun.  I had to jump in and swim for a few minutes to cool off. LOL


We're looking forward to the big fireworks show Sat night.  There will be hundreds of boats on the water and it is always quite a sight.  The grandkids are spending the weekend with us and they are so excited. 


I don't have your email address.  Trust me, if I had it, I would have emailed you a long time ago when you disappeared! LOL  I've never been on any of the other sites you mentioned either!  I guess I'm not up to date on all the latest social sites. LOL  Maybe one of these days....

Hey AC! The pudding turned out great, I especially love the butterscotch recipe! Thanks for adding that! I had a great 4th even though it rained during the parade. Well, more like a steady drizzle, so it wasn't a wash(pardon the pun!). The fireworks were awesome!


I hope you had a great 4th! Sounds like you did having the grandkids there. Thanks for the kind words about the pic! It was taken by my husband back in 2001 for a CD that I recorded down in Tennessee. Unfortunately, because of my health issues, I don't look like that anymore.  At least I don't think so, but I do still "clean up" pretty nice! I'm really excited, in October I'll be attending (Finally) my class reunion. Actually it's OUR 50th B-Day party. I'm helping to put it together, and will be performing for my peers (YIKES!) over that weekend!  The best part, you'll get a kick out of this, the night before the catered party at the hotel, I'm catering a smaller party at a local gymnasium.  I mean they ASKED me to cater the feast!  Isn't that a hoot?Indifferent I don't know which to be more nervouse about, performing in front of about 150 people that remember me as a weird kid, or serving food that I cooked to about 15-20 of these same people. I'm not sure what I'm going to do about Hors D'Vours, but the salad should be easy. I'm making 2 different, one italian and the other a garden salad. I think 2 main courses, 1 Italian with garlic bread, the other I'm thinking beef wellington (I'll definately need the recipe!). The veggies will be the same for both dishes I hope, unless you have any suggestions. For dessert, one will be my cheesecake and the other I think apple pie, what do you think? Also, I have no idea what wines to serve!!! Can you help with any of this? I'm going to post this, but I wanted to give you a heads up, for HELP !!!Stick out tongue


How did I get into this one?Indifferent To go from being totally clueless in the kitchen to being the caterer to some 20 people for a party is nothing short of a miracle don't you think? I owe it to this site for all of the help I've gotten with my dumb questions! Thanks to all!
