My college boyfriend's mother (she lived in St.Louis) had a great recipe for apricot diamonds. It had a shortbread-type crust with nuts in it, with some reserved to use as a topping over the apricot filling. The filling was dried apricots cooked in water and sugar on the stove, then blended into a paste in the blender. The bars took hours to make, so we didn't make them very often, but they were wonderful. Unfortunately, over the years, I have lost both the recipe and the contact. If anyone knows something like this, I would love to have it again!
