Emergency Dinner

Everybody has an emergency fallback-on dinner. Luckily I have a husband that's not picky. I cook breakfast for dinner creating omelettes that are stuffed with whatever veggies and cheese are on hand. Sometimes the combos become interesting. Apples, Cheddar and sausage is one you might like to try.

This is one of my easiest favorite meals: 

Brown a pound of ground beef w/ onion, season w/ salt and pepper. Add 2 or 3 diced potatoes and a can or 2 cups of beef broth. (I use water and a couple of cubes.) Simmer 15-20 min till potatoes are done. Add one can of creamed corn. Hamburger stew! Done!  Cook some biscuits while the stew is cooking. Perfect.

Just last week, my son (who is a great cook) made dinner. He was trying to put together a quick dinner because he was tired after working hard all day. He used boneless chicken breasts, sauteed in a skillet. While he had bow tie pasta cooking, he was grating some cheddar cheese. About 3 or 4 minutes before the pasta was done, he added 2 heads of broccolli florets, and then drained all in a collander. Then he mixed the pasta, broccolli, chicken, a can of cream of mush-room soup and about a cup and a half of cheddar cheese in the same pot he had cooked the pasta in. He cooked it until everything was hot and cheese was melted. He served it with a bag of salad greens with some chopped tomato and red onion. Not only was it fast, but it was very good.  I'm a SAHM with a 18 month old baby and part time job to deal with. By the end of the day I'm totally exhausted and have very little energy to cook up some dinner. We often end up with some emergency dinners.  I  read about some quick dinner ideas on http://mybaby.com/playground which did not require me to write down the recipe. I'm wondering how I can surprise my family with some new recipes and not spend much time and effort cooking when I'm totally drained. Is there a way I can get the best of both worlds?

hi  i saw you had that you only had leg quarters.. well any chicken i have  i simply make a chicken bake.. take some rice and couple cans of cream soup and add in some milk and lay the chicken in a bakin pan and cover with rice mix.. bake 40 min on 375... its really good.... i dont have exact amounts cuz im not really a measure person myself but it always turns out really good no matter what :) good luck on your quest :)

 i use a lot of leg quarters also care2bake i cut them apart use legs for frying and thighs i cut the meat off the bone being careful to keep meat in one piece and use it for making chicken parmesan. or boil up chicken thighs tell done take off bone you get more meat that way and i use it in salads,tacos or any thing you like.i also like to make frito pie or meat ball subs by taking out some of the bread inside of french bread to make a hole so i can put in  some spaghetti sauce,meatballs and onions,bell peppers that i've already cooked up and is good and hot then put into french bread add cheese heat until cheese is melted and your ready to eat i also like to take french bread add a little spaghetti sauce on it add some cheese then add what meat i have ready and vegetables add more cheese on top to hold meat and vegetables on heat in oven until cheese is melted it makes great pizzas.you could also use bologna,cut up hot dogs,ham or what ever lunch meat you have in the house for pizza you can also make taco pizzas on french bread but use taco seasoning mix put beef or chicken in it cook it up add it on french bread with some sauce add some cheese lettuce,tomatoes,onions if you like and more cheese on top. be sure to toast the french bread before hand with the taco fixings then add the salad on top hope this helps

baked fish sticks and french frys are good if your in a hurry or make B.L.T's i bake my bacon in the  oven on a cookie sheet at 350 for 30 to 40 min or until done thats the way we all cooked it at the nursing home where i use to work as a cook it took a little longer time because there was a lot more bacon to cook or you could make sloppy joes or maybe some spaghetti would do nicely

There are so many great ideas and recipes for emergency dinners.  What I do is pick a day that is kind of slow for me. (Organization is key for me)  I cook 1 whole bag of frozen veggies eldente(Not cooked all the way), some instant mashed potatoes and some gravy from a packette.  Then I cook a main course like chili, fettuchini alfredo, spaghetti.  Of course we'll eat some later that evening,  but the rest I'll just refrigerate for the rest of the week.  During the rest of the week, even if I do have time or feel up to cooking, I still only really have to cook the entre.  Everything else I can either nuke or reheat on the stove.  It's so much less work that way!  The eldente veggies will get completely cooked when I reheat them. This way, we also get a nice variety of meals, if we want.

The stand by especially for my husband if he has to cook is Mac & Cheese Mix Up.  Basically it can be made with whatever you have in the kitchen!  Below are some of our favorites


Prepare two boxes of Mac & Cheese as normal & then:


Regular:


Browned Hamburger meat seasoned with salt, pepper, & garlic - browned with chopped onions, green bell pepper, & rotel tomatoes. Mix with Mac & Cheese - mix well & have a bowl - goes well with garlic toast


Mexican:


Browned Hamburger meat seasoned with salt, pepper, & garlic - browned with chopped onions, green chiles, jalapenos, & rotel tomatoes, sometimes black beans - add one can of red enchilada sauce (we like it hot).  Mix with Mac & Cheese - goes well with warm tortillas or chips


Italian:


Browned Hamburger meat seasoned with salt, pepper, & garlic - browned with chopped onions, green bell pepper, mushrooms, & rotel tomatoes - add your favorite spaghetti sauce.  Mix with Mac & Cheese - goes well with garlic bread


***I have also replaced the hamburger with ground turkey or used canned chunks of chicken breast, canned tuna, or salmon if I am in a super hurry and don't have time to really brown hamburger or turkey plus it mixes it up once in a while.  (Chicken is fine with all three above but I would just stick to the regular if you use fish!!!)***


Hey, you never know until you throw some stuff together.  My family actually requests this even when I have time to cook!  Their favorite is the regular with hamburger.

You can put your chicken in a baking pan and season with chicken bullion powder (not cubes). Add a large size can of green enchilada sauce and bake at 425 until chicken is completely cooked (45min to an hour). Add shredded cheese, perferrably mozarella on top of the chicken and sauce. Heat in oven until cheese is bubbling yummy. The teenagers absolutely love this dish with spanish rice.

This is my favorite emergency dinner. It's called Tuna Delight and I grew up on this! This is the basic recipe but it's easily doubled or tripled! 1 can of tuna drained, 1 can cream of whatever (we use mushroom),milk, potato chips(I use the ruffled ones it's a good way to use up the crumbs and little pieces at the bottom of the bag!). In a casserole ( I double this recipe and use a 9 x 13 pyrex) dump the tuna and soup in then fill the soup can with milk and pour it in, stir it up good and then crush up and add enough potato chips to make it kind of thick like cake batter. Bake at 350 until brown on top, about 30 minutes. Serve with mac and cheese and veggies. This is soooo good!! If you double or triple it just make sure you double the milk for every can of soup fill up and use the same amount of milk 2 cans soup 2 cans milk.

My fall back plan is what my mom always called Oprah chicken.  If i remember correctly it was featured on her show... but its just using chicken breast and shake and bake but instead of directly putting it on the chicken we put vanilla or plain yogurt on the chicken then pur the shake and bake over it.  It keeps the chicken moist and has a sweet taste to it... yet the outside still gets crunchy!

Try This...


Cover a baking dish with broccoli flowerettes heat 2 cans of Cream of mushroom soup in separate pan with 4 cups of fresh sliced mushrooms. Cover Broccoli with whatever chicken pieces you have available. Pour Soup Mixture over Chicken/Broccoli sprinkle Cheddar Cheese over top, Salt and Pepper to taste.


 Bake at 350 for approx. 35 minutes


You will want to just eat the Broccoli by itself with the sauce if you are like me! (as a special seasonal treat use Asparagus instead of Broccoli)


Dive in!

I found your recipe when I did a search with ingredients on hand.  I didn't use it right away and went by memory last night so I missed a couple of things.  Didn't matter as it was quick and tasted good.  I love it when my kids don't question the meal and just eat it!   Thank you for putting your recipe online.

I have 3 Emergency dinners. 


 


1) Creamed tuna on toast. 


1 can tuna


2  tablespoons butter or margarine


3 to 4 tablespoons flour, or enough to soak up the liquids


4 cups milk (if using whole or 2% milk you can dilute this by half using water, it will not hurt the flavor or texture but will save you money.)


salt andpepper to taste approx. 1/4 teaspoon each


Toast


 


  Add tuna, and margarine to saucepan, stir, add salt and pepper.  after butter melts, add flour stirring to soak up all liquids.  let cook for a minute or two.  then add about 1/3 of the milk mixture stirring constantly.  once it thickens you can keep adding until you get the consistancy you want.  I like a fairly thick gravy type consistancy. 


  Then just serve over toasted bread.  I like to tear my bread into bite size pieces before I add the tuna.


 


2)  Pan fried Salmon with Pinot Noir Sauce


 


  Salmon fillet (how ever many you want or need to cook)


  season with a bit of salt and pepper on both sides


2  tablespoons olive oil


3/4  cup Pinot Noir


3 fresh thyme sprigs or 1/8 teaspoon ground thyme or thyme leaves


2  tablespoons Cold butter cut up


salt and pepper to taste


 


In a Saute pan over medium heat add the salmon.  Cook undisturbed until browned on first side and white fats are seeping from between the layers of the meat half way up the fillet.  turn over and cook on second side until done.  Remove from pan and cover to keep warm.


 


  To the hot pan add the wine, and thyme. turn up heat to medium high;  Let reduce by half;  add the butter salt and pepper remove the thyme and stir until butter has melted and is incorporated into the sauce. 


 


  Serve with sauce over fish or with it on the side for dipping.


 


3)   Chicken Caesar Salads


 


I usually have either cooked or defrosted boneless skinless chicken breasts.  So if they are thawed I season them with garlic powder, onion powder, salt, pepper, paprika, thyme, and sometimes a bit of sage or rosemary.  saute them or grill them then chop and add to salads.  In my salads I do a few different things to change them up.  1) Lettuce, croutons, shredded parmesan cheese pepper and Caesar Dressing.  2) lettuce, red onions, tomatoes, pepperoncini slices, black olives sliced, shredded Parmesan cheese, and Italian dressing. 3)  lettuce, red onion, tomato, Ranch Dressing.  I add the chicken and it becomes the meal.  Hope these ideas inspire you too.  I have to look through all the others here.  I am excited to see what Y'll make for your emergency dinners.

If you could grill them you could make Hoisin chicken.  you marinate them in a hoisin mixture then as they are grilling you baste them with some that you have pulled asside before the marinating process.  You could also do this in your oven. 


 


    How about Oven Fried (baked) Chicken!


 


 


Ingredients


 


4-8      chicken pieces (preferably 2 breasts, 2 thighs, 2 legs, and 2 wings) or boneless skinless chicken breasts


½         cup all purpose flour


Kosher salt and freshly ground black pepper


4          cups cornflakes


2/3       cup buttermilk


2          tablespoons Dijon mustard


2          teaspoons ground thyme


2          teaspoons paprika


2          teaspoon ground sage


2          teaspoons onion powder


2          teaspoons garlic powder


2          teaspoons black pepper


2          teaspoons kosher salt


 


 


 


Directions


 


1.         Preheat oven to 425 degrees.  Place a cake cooling rack in a roasting pan or on a baking sheet.


 


2.         Season chicken with ½ teaspoon of each of the seasonings.   In a wide bowl or on a plate, season the flour with ½ teaspoon of all the seasonings you seasonings listed.  Dredge each chicken piece through the flour so it’s fully coated, tap against the bowl to shake off excess flour and set aside.  Discard the flour.      


 


3.         Crush the cornflakes by placing them in a big resealable plastic bag (with as little air inside the bag as possible) and run over the flakes with a rolling pin.  Open bag and pour the crushed flakes into wide bowl or onto a plate.  Season cereal with 1 teaspoon of each of the seasonings listed.


 


4.         In a large bowl (big enough to dredge the chicken pieces), mix the buttermilk, mustard, cayenne pepper, paprika and sage.  Give each flavored chicken piece a good buttermilk bath and then roll in the cornflake crumbs.


 


5.         Arrange the chicken pieces on the rack and place in the hot oven.  Cook for 15 to 20 minutes, lower the heat to 375 degrees and cook for another 25 to 30 minutes, until cooked through and crispy.  Check for doneness.

Hi, I have 3 things that I fall back on, already frozen/cooked foods( such as pizza spagetti cassirole), frozen pizza or pot pies, and buscuite, sausage gravy,eggs,& fried potatoes. They sometimes my D.H. only wants country corn bread & milk. Granna2

At Red Robin, they have the Royal Red Robin burger, which is a cheeseburger with a fried egg on it. Delicious! I keep wanting to try making that at home. It doesn't sound like it would be good, but it is fantastic.
