Emergency Dinner

Everybody has an emergency fallback-on dinner. Luckily I have a husband that's not picky. I cook breakfast for dinner creating omelettes that are stuffed with whatever veggies and cheese are on hand. Sometimes the combos become interesting. Apples, Cheddar and sausage is one you might like to try.

CAN YOU SUBSTITUTE THE RICE WITH ANYTHING ELSE? MY HUSBAND LOVES CHICKEN AND MUSHROOM SOUP BUT WILL NOT EAT RICE. YOUR RECIPE SOUNDS SO DELICIOUS.

Taco Salad

 Make your taco meat as directed on the taco seasoning package, chop lettuce, tomatoes, onion add shredded cheese and top with smashed up Doritos Smokin' Cheddar BBQ potato chips, with whatever dressing you prefer. This takes like 15 minutes to make and is soooooo good you'll never make enough. Wait until you are serving to add the chips though because they become soggy if you don't. You can also add a can of ranch style beans to this and change it up a little.

Ladyh,

Have you tried cooking the rice in mushroom soup yet?  When you cook rice in soup or in a broth (chicken or beef etc.) the rice absorbs the taste and unless he has an issue with the texture he might be willing to eat it that way.

I got this recipe from a friend. It's so quick and yummy, and it's literally made from only canned items! Dinner in under 10 minutes!

 

Taco Soup:

1-1 1/2 lbs. ground beef, cooked and seasoned to taste with garlic salt/taco seasoning 

1 can Rotel (Mexican or regular)

1 can diced tomatoes

2 cans (regular size) tomato sauce

1 can corn

1 can black beans

1 can kidney beans

1 tablespoon chili powder

 

Mix all ingredients together over stove and stir until hot. Top with Fritos, cheddar cheese, sour cream, chopped onions, cilantro, or anything you have on hand. My hubby loves it! (Just don't eat before a road trip!)

 my favorite emergency dinner-

enough frozen chicken (skinless boneless) pieces to squeeze, single layer into a  9x13 pan

     Mix together:  1/2 cup light soy sauce,  1/2 cup brown sugar  1/6 cup water

Pour over frozen chicken-Bake at 350 for 20 min (uncovered), turn chicken over and bake another 20 min.  Then turn oven to 400 and bake a final 5-10 min.   Try it it is so easy and goodBig Smile

I preyyt much make the same but add red kidney beans, and i also use BBQ fritos instead of chips they just add a

little more crunch, you can also add peppers and salsa if you dont like dressing i myself preffer italion dressing.. This is a very quick and healthy dinner..

My fallback in our household is always Hamburger or Chicken Helper.  One pound of ground beef or some boneless chicken, one box of the helper and a can of vegetables and waalaa - Instant dinner in about 30 minutes.  It works every time and there is such a variety of flavors.  I keep it stocked in the pantry for the "I'm in a hurry dinners".

Cous Cous cooks in 5 minutes if you need a substitution for rice :)   I get tired of rice too some days... and cous cous is wonderful!!!

 

My go to meal is french dip sandwiches.   We usually have sandwich or dinner rolls in the house. If not, whatever bread you have will work.  Any type of sliced roast beef works actually any meat you have will work.  Sandwich thin or from the deli or pre packaged.  Simmer the meat for 10 minutes in beef broth (or au jus sauce)  toast the bread or rolls in the oven for 10 minutes (350)  or 5 minutes if you have anything else in the oven at a higher temp.) and they are done. You have dipping sauce if you like it.    I add different cheeses to mine to change it up. Last night was kraft american on the bottom and a nice layer of spicy pepper jack on the top.   Can be served with french fries, tater tots, salad, or your favorite soup.  Anyway you look at it... it's dinner in 15 minutes!!! :)

Try this-  Lemon Couscous Chicken

    1 1/4 cup water

    1  T. extra vergin olive oil

     2 c. broccoli florets

     1 pkg. Near East Roasted Garlic and Olive Oil couscous mix

     1 1/2 c. chicken, cooked and chopped

     juice of 1 lemon

     1/4 tsp lemon peel (optional)

In a large skillet, bring the water, oil , brocolli and contents of the spice packet from the mix to a boill.  Stir in the couscous,chicken, lemon juice and lemon peel.  Remove from heat.  Cover and let stand for 5 min.  fluff lightly with a fork.  Serve hot or cold.

The standard at my house growing up was hamburger hotdish.  Hamburger, cream of enter soup in cupboard here, and rice.

I'd go with the norm...350*

 Almost everything I cook in the oven is at that temp anyway..and you can't go wrong!

I buy leg quarters in ten pound bags and cook the whole mess in a large pot.  Simmer for about an hour and then lift out pieces and bone them.  Set meat aside and freeze some for various recipes (the dark meat makes killer chicken salad) and throw the bones and skin back into the pot with a couple of onions and carrots and a few celery sticks and simmer for 3 or 3 hours longer.  Drain and strain and refrigerate the resulting stock.  The fat will form a cake on top that can be rimoved when it has fully hardened leaving a rich gelatenous stock that adds flavor and mouthfeel to soups and casseroles.  The chicken fat cake from the top of the stock can be melted and poured into ice cube trays and chilled.  The hardened cubes of chicken fat can be saved in the freezer in a plastic bag and are pre-portioned for use in stir fries ro other applications.

Emergency Dinner?  RAMEN SOUP.  For each two people use one pack of soup.  Before adding the noodles or soup mix to the pan add the all fillers that make it a dinner.  Use any vegetables in the fridge Broccoli, cauliflower, cabbage, green beans etc, and throw a large handful or two in the pot per person.  Dice fine a potato or two and throw in pot.  Add diced fresh or leftover meat if you have any on hand in the freezer or fridge.  Add 3 cups of water per 2 people, heat to boil and simmer 6 minutes.  Remove seasoning packs from Ramen packages and crush the noodles and add to pot and stir and simmer for 3 minuets.  Add more water if necessary and add seasoning packs.  Stir and serve.

My FAVORITE emergency dinner is so easy!  You'll have to try it.  This makes enough for me and my hubby to have a big portion, and take some to work tomorrow for lunch...

In an electric skillet at 350 or skillet on med-hi, add the following... 

 Chunk 2 or 3 chicken breasts, 1 can of Ro-Tel (or generally walmart brand!) tomatoes with chilies, and 1 can of black beans (drained and rinsed)

 Cook for about 20 minutes.  That's it!  And it's SOOOO good!  It's so good, it doesn't need any additional spices added or anything, but if you feel you must some garlic powder and/or cumin would be good.  I generally put some cheese on top for the last few minutes, and serve with sour cream, but really it's good just like that.

Usually I'll make some of my favorite rice to go along...

in my 2 cup measuring cup, put a big squirt of lime juice (always in the fridge), and add enough water to make 2 cups.  Add 2 chicken boullion cubes and 1 cup brown or white rice.  Cover and cook for 18 minutes.  (bring to a boil, then reduce to a simmer for the rest of the time).  Put 1/2 cup or so of rinsed frozen corn in, stir, and let it sit for another 2-3 minutes.

This is my favorite quick meal and company meal, and everyone always compliments it.  They can't believe when I tell them exactly how easy it is.

About the same at our house except I call it 2, 2, 2.  Two pounds of meat (grnd beef or sausage), two cans of green beans and two cans of soup (cream of mushroom or cream of celery).  Add some milk to thin soup mixture and as always, cheese and onions are optional.  The kids always scarf it up and we usually have most everything on hand at any time we need to make this wonderful dish.

I always try to keep a bag of frozen chicken breasts in the freezer to make my favorite emergency meal.  Lay 4 to 6 chicken breasts in a 9 X 13 inch baking pan.  Spread a can of cream of mushroom soup over them.  Grate 2 cups of your favorite cheese and sprinkle that over the chicken and soup.  Then I make a box or two of stuffing mix according to the directions but 1/2 cup short of water.  Spread this over the whole cassarole and pop in the oven for 1 hour.  Its a great warm meal in a hurry.  Hope you enjoy it. 

 Sounds great! I might add broccoli too for color and veggies.

 

Question...do I need to defrost the chicken first?

I get requests for this recipe over and over. We have it quite often. It is simple, quick, flavorful and very hearty. Enjoy!

Taco Soup

2 lb. ground meat (or less)

1 onion, chopped

1 can chopped green chiles

1 can hominy or corn, or both

2 cans pinto beans or mixed beans

3 cans diced tomatoes (or use 2 diced tomato and 1 diced tomato with green chiles)

1 pkg. dry taco mix

1 pkg. dry Hidden Valley Salad Dressing Mix

2 1/2 cups water

 Brown ground meat and onion together. Add the remaining ingredients. Mix all together and simmer 30 minutes. Serve with shredded Mexican cheese on top and/or sour cream and with corn chips. Serves 12-15.

Note: You can vary the recipe according to your taste. You can increase or decrease heat with chiles or Rotel.

I don't have a meat thermometer how long do i broil two 10oz about 1 inch thick beef ribeye steaks so that they will be well done?

We often make what my family lovingly calls "slop" when running low on food. Slop is whatever you have in the house that you throw together to make a meal. Our favorite "slop" dinner is chicken breast placed in a baking dish with a bottle of Italian dressing, a bottle of ranch dressing, frozen broccoli, and whatever cheese is in your house. (For us it is mozzarella and cheddar.) We bake it at 350 degrees until the juices from the chicken run clear. It is absolutely delicious and super creamy. And is great served with brown rice on the side. Or if you don't like rice you can put a heap of eff noodles on the plate and place the chicken breast on top and pour some of the juices overtop. It is yummy either way you serve it. Just keep in mind when I make this recipe it is enough for four adults and three children under the age of six. So if you are making a smaller portion you won't need a whole bottle of each of the dressings.

 Another favorite is chili made with whatever is in the house. The last time I made it I used stewed tomatoes, french dressing, ground turkey and ground beef (I only had a little of each left), leftover green pepper, leftover mushrooms, chili powder, onions, kidney beans, leftover zucchini, and leftover eggplant. It was so yummy.

 

Pepperoni Rolls or Sausage Rolls are also popular in my house. We buy the frozen bread rolls put them out in the morning to rise. And then when they are nice and puffy we squash them and fill with browned sausage or pepperoni and either mozzarella cheese or cheddar cheese. Fold them up into a ball and bake according to the package of the dinner rolls and serve with a salad. Quick and simple and super tasty.

Or after you squash down the dough you could spread some sauce on the bottom add sausage or pepperoni. Saute mushrooms, onions and green peppers. Put on top of the meat you choose. Top with black olives and cheese of your choice. Finish like the pepperoni rolls and you instantly have mini strombolis.
