Help with Chicken!

Help!  My husband hates chicken.  Unfortunatley for him, our budget is very very tight and chicken is healthier then beef and it is also cheaper.  I need easy, quick chicken ideas that would blow his socks off!  He likes things a little peppery and a little spicy if that helps.  He adores garlic and onions.

I love any kind of Mexican with chicken: enchiladas, fajitas, tacos.


I am also originally from Buffalo, NY, so I love Buffalo-seasoning. 


"Pulled" bbq chicken is great, and it goes a long way on sandwiches.


Whole roast chicken can be economical, and would be a great way to: 1) have roast chicken for dinner  2)Use the leftover meat for a stir fry  3) Make soup out of the remaining chicken/bones.  Learning how to cook a whole chicken will save you lots of money.


Try chicken paillard, or thinly pounded chicken cutlets.  You butterfly a breast by slicing into the thick part of the breast and opening it like a book as you slice through.  Pound these cutlets out thinly and pan fry.  It looks like so much more than one breast.


Try canned chicken for soups and stir fries--it is very economical.

Try making Chicken Phillies..... Like a Cheese steak standwich only with chicken instead.  Use chunks of chicken, any kind.  Just fry it up and you can load on peppers and onions, cheese and hot sauce.  He won't even notice its chicken.  I actually prefer these to the beef.  Wink

I am also a huge fan of BBQ pulled chicken sandwiches. I poach the chicken, pull it, then simmer it in a saucepan with BBQ sauce and brown beer. It's delicious on rolls with blue cheese and sauteed onions.


You could also try making Indian food with chicken, such as Chicken Tikka Masala - it's very meaty and tomato-y (he'll hardly know it's not beef).


I really love making chicken tacos with pulled chicken too. You can saute garlic, onion, dried oregano and chipotles in adobo sauce (smoked jalapenos - it's spicy and smoky - verrrry good) then add the chicken. Serve the tacos with the regular fixins: sour cream, tomatoes, lettuce, cheese, avocado....whatever you like.

Hi,  I make a meal with chicken that my whole family loves. 


1lb of boneless chicken (usually breast meat, but I use thigh meat)


1 can cream of mushroom soup


2/3 cup of milk


1 bag frozen chopped broccoli


1 1/2 cups of shredded cheeese (any flavor)


Brown the chicken til mostly done (of boil - pressure cook ) then shred or cube.  put in a casserole dish.  mix milk and soup together and pour on chicken.  Add 1/2 of the cheese and the broccoli.  mix well till all is covered with soup.  Top with remaining cheese and bake at 350 for about 30 minutes or until bubbly.  My daughter hates broccoli, but this is one of her favorites!

Take off all the skin and fat of thighs, legs, whatever you choose, and throw it in the crock pot. Put on freshly cracked pepper and cayenne pepper. There is also a spice from McCormick called 'Hot Shot' that tastes awesome. Mince a whole fresh garlic clove over the top. Then slice up a couple of red onions and spanish onions and layer them on top. Cook in the crockpot 8 - 10 hours on low. Serve it with rice. If he doesn't like plain rice, while the rice is cooking, make scrambled eggs (about 10 - 12 eggs), and cook a 16 oz. bag of either mixed veggies or carrots and peas in the micro with no water or salt added. When the rice is done, add it and the veggies to the eggs. Stir, and add about 1Tablespoon of soy sauce mixed with about 1 cup of water. Add garlic and more water with soy sauce if it's too dry. Also, I always add a can of pineapple chunks (drained) to the rice. Hope this works.

its not very spicy but it does have alot of flavor.  I make this pretty often and my kids love it as well as my non chicken eating husband.  prepare a box of stuffing according to the directions and press it into the bottom of a baking dish.  you can either sautee the che chicken or boil it (depends on if the chicken is on the bone or not if on the bone boil it until done and pull off of the bone into smaller pieces).  Place chicken on top of stuffing mixure evenly.  take 2 cans of cream of chicken, mushroom, or celery soup (depends on your taste) and since your husband likes garlic place a couple of tablespoons of chopped garlice in the soup and mix.  Then pour over the chicken and stuffing and bake at 350 until soup starts to bubble or brown.  and viola you have what i call chicken casserole.  And this recipe makes enough to save and use for later.

      I am not sure what kind of chicken you have.  We eat a lot of chicken.  Here are some of my ideas.


 


Boneless skinless chicken breasts:  cut into large bite size pieces or strips brush with Dijon mustard and roll in grated Parmesan, saute in a little olive oil.  they will cook pretty quickly and the caramelized cheese is Wonderful.  and you could serve it with a dip if need be.  I also like a recipe called Dijon Chicken Smothered in mushrooms.  It is like a chicken marsala but with dijon.  Very tasty.  there is one more I could suggest it is a Thai Chicken Broccoli Salad, spicy as you want to make it with a peanuty sauce. 


 


      Chicken Thighs, the woman that suggested pulled chicken (Sorry I forgot your name), has a great Idea, I like to infuse some apple juice with my barbecue rub, then inject it into the thighs.  then season the thighs REALLY WELL, wrap in plastic wrap and into the fridge (this will also work in a container if you don't want to use plastic wrap) overnight.  then remove from frige; let rest and come closer to room temp.  then onto a baking sheet and into a 330-345 degree oven until done.  Or you could do this in a crock pot too! 


 


whole chicken I would do a beer can chicken:  I love them and the leftovers are GREAT for making soups.  But I have never run across someone that HATES chicken.  LOL!  You are gonna need some luck and a great skill in the kitchen.

How about lean pork loin?  We use that instead of chicken, because we eat chicken 90% of the time. 


If it has to be chicken, roast chicken thighs or breasts (with skin and bone) for 45 minutes at 350.  We remove the chicken from the bone and discard the skin.  Then, we make a simple sauce of our favoriate BBQ sauce, and we add sauteed vidalia onions and pineapple chunks.  Heat in a saucepan and pour over the chicken.  You can do open-faced sandwiches with this too.  Very yummy!
