Recipe for pasta based/no cheese spinach quiche

Well, I'm stuck again!  I'd like to make a spinach quiche for dinner tonight but, I have no cheese in the house.  I thought maybe I could use some ground beef in it, as well.  I don't have any lemon, which I usually put on everything, especially spinach, so I don't want a bland tasting quiche.  Anybody have any iudeas on how to make this without it tasting bland, but not too hot?  Gee, I don't ask for much do I? Thanks, guys!

Recipe for pasta based/no cheese spinach quiche

Hi CS!  I've never made quiche without cheese, but I think it would work. LOL    Here are two of my favorite quiche recipes; one with a crust and one without.  All you really would have to do is put the cooked ground beef, spinach, and whatever else you want, like onions and spices, on the crust then pour the egg/milk mixture over it all and bake until the eggs are set....or for the crustless, just mix it all together and bake it.  


Quiche 
1 refrigerated pie crust, 9 inch
1 pound bacon or sausage, cooked and crumbled or 1 cup diced ham
1/3 cup onions, finely chopped
1 cup cheddar or Swiss cheese, shredded
1 cup grated Parmesan cheese
4 eggs, beaten
1 1/2 cups milk or heavy cream
Salt and pepper, to taste

Place crust in 9 inch glass pie pan. Layer meat, onions, peppers then cheeses in pan. Combine eggs, milk, salt, and pepper, then pour over layers. Bake at 375 degrees for 40 to 45 minutes until the eggs are set and top is light brown.



Crustless Quiche
You can vary this recipe to suit your tastes. It is great with cooked bacon, cooked sausage, steamed broccoli, mushrooms, artichokes. I also like swiss, gruyere and mozzarella cheese or a combination. Just depends on what I have on hand.

2 cups milk
4 eggs
3/4 cup biscuit baking mix
1/4 cup butter, softened
1/3 cup onions, finely chopped
1 cup grated Parmesan cheese
1 (10 ounce) package chopped frozen spinach, thawed and drained
1 cup cubed cooked ham
8 ounces shredded Cheddar cheese

Preheat oven to 375 degrees. Lightly grease a 10 inch quiche dish.
Beat together milk, eggs, baking mix, butter, onions and Parmesan cheese. Stir in spinach, ham and Cheddar cheese. Pour into dish and bake for 50 minutes, until eggs are set and top is golden brown.



Edited to add: Well, CS, as I hit Post, I saw where you mentioned pasta in the heading. LOL  Now I don't have a clue!

Hi AC,  Thanks for the recipes, and don't worry about the pasta, after thinking about it and doing a little research, I realized it would probably impossible to incorporate pasta into the recipe.  You're gonna laugh at what I did.  I made the quiche; I added to the spinach, small chopped, cherry tomatoes, some chopped fresh parsley, lemon zest and juice (1), salt & pepper,shredded swiss cheese (about 1 cup), and a little paprika and lemon pepper to the crust mix.  I mixed it all together and poured it into a abt. an 8" pie tin. And then baked it for about 30 minutes @ 400F.  It tasted ok, but it looked terrible, it was runny,Embarrassed and you could hardly taste the crust (which tasted good, when you could taste it).  Here's the next gem!  I decided to take my left over mashed potatoes and tried to make potato pancakes with it.Embarrassed I had read granna2's post, so I thought it would be easy.  It was a comedy of errors. Sad The good thing is, between my husband and me, we came up with a better recipe.  We decided to double the bisquik for the crust to make a bottom,with the same spice mixture, make the spinach mixture just as i did before,take the leftover mashed potatoes and fry them with less butter so they're a little browned and put them on top of spinach.Add a little more shredded swiss cheese  Then make the top with more bisquik and spices.  It should be like a pot pie.  Bake for maybe 1 hour @ 400F.  It should come out pretty good, what do you think?  Do you have any suggestions or additions to add?  I'd really like your input.  Maybe I can turn this into something more original, with your help!Yes

CS, did the eggs not set in the quiche?  If you try it again with spinach, maybe you could saute the spinach in a skillet until the liquid cooks out, then mix it with your other ingredients and the eggs/cream.


Your potato pot pie sounds a lot like a veggie version of a Shepherd's Pie.  It's a great way to use leftover meats, veggies and mashed potatoes!   All you do is layer the meat on bottom, then veggies, then top with mashed potatoes.  Since everything is already cooked, it just bakes until heated through and potatoes brown on top.

Hey AC!  UMmmmmmm!   Duhhhhhh!  I feel foolish, I forgot the eggs!Embarrassed  You know, I was thinking about sheperds pie when I was typing the last reply, but I didn't want to say so because I don't know what a sheperds pie is.  I've only heard of it.  Like I said,   DUHhhhhhhh!!!  Oh, well!  At least I'm learning right?  Thanks for the help, as always!
