The first thing to come to mind would be a "hobo" dinner. Shape seasoned ground beef into patties, sit one pattie in one square of alumimun foil, slice onions on top (2 or 3 onion rings), peel one large potato and slice thinly over the sliced onion, sprinkle with celery salt, top with a generous pat of butter and seal up the individual foil pattie servings, repeat until out of hamburger patties. Bake at 350 for 45 minutes or until done. These are a staple in the south & so good they can be addictive.
Mother would saute onions and green pepper in butter, add ground beef and cook until done, drain, peel and thinly slice 3 or 4 potato's, add 1 can of tomato soup, little water to thin out the condensed soup just a little bit, salt & pepper to taste, cook until potatos are tender & done. If you like english peas you can add a can of drained english peas. I add the Lesuer english peas, and a can of Leseur baby carrots, drained. Mom's would be thick, Id just put it in a bowl and eat it. If you wanted it over something I suppose you could put it over rice or noodles. I prefer it in a bowl, with some good old cornbread or a good crusty piece of garlic bread. I grew up on this, over 30 years ago, and I absolutely loved it! It was just something mother threw together, one night, when she got in from work & had to fix a quick dinner. I tend to keep supplies of tomato soup, onions, green pepper, & potatos on hand for those nights when I come home and have to throw something together quick.
