Usually in a pinch, there all good, but I remember a dish my dad used to make w/ real potatoes and if you could come up with and eaiser version dry it would be heaven. Raw potatoes grated w/ salt & pepper in a cast iron skillet in the oven, the tricky part was flipping the potatoepie half way thru the cooking time. They always came out golden brown and crunchy on the outside and real soft and creamy in the center. Reminds me of days long gone.
