My standby recipe for Meatloaf is as follows:

2 pounds ground beef

1 envelope dry onion soup mix

1 egg

1 medium onion, chopped

1/2 cup catsup

2 slices bread, tear into pieces

350 degree oven, about 1 hour

mix together first 5 ingredients. Then lightly mix in the bread pieces. Shape into a loaf and place on a pan that has been sprayed with cooking oil (I use PAM). My pan is similar to a broiler pan which drains away the fat as the meatloaf cooks. Good luck!

Vegetables are a must on a diet. I suggest carrot cake, zucchini bread, and pumpkin pie. ~Jim Davis

Very easy meatloaf

2lbs of Hamburg

1 egg

1 pk of Lipton Onion Soup Mix

1/2 pk of saltine crakers crushed (20 or 30 crakers) also can use any kind of crakers you like

1/2 cup of ketcup

Just cook in over on 350 for about 45 mins and you have a great tasting meatloaf

I believe I got this recipe out of the "Light & Tasty" magazine.  It's really good and as a bonus it's not as fattening as some other meatloaf recipes.

Chili Sauce Meat Loaf

Ingredients:

1/3 + 2 Tbsp

Chili sauce, divided

1

Egg white

1 Tbsp

Worcestershire sauce

¾ C

Quick cooking oats

¾ C

Finely chopped onion

2

Garlic cloves, minced

1 tsp

Dried thyme

½ tsp

Salt

½ tsp

Pepper

1½#

Lean ground beef

Directions:

1.  In large bowl combine 1/3 C chili sauce, egg white, Worcestershire sauce, oats, onion, garlic, thyme, salt and pepper.  Crumble beef over mixture and mix.

1.  Shape into a 9x4” loaf and place in baking dish coated with non-stick spray.

2.  Bake uncovered at 350° for 50 minutes.  Brush with remaining chili sauce.  Bake another 5 – 10 minutes longer or until a meat thermometer reads 160°.  Let stand 10 minutes before slicing.

2 slices = 244 cal, 10 g fat, 2 g fiber
