I use about 1/2 # sausage and 1 # hamburger   Bell pepper, onion, 1/2 c. tomato juice (or BBQ Sauce) an egg and  1/2-3/4 c. Oatmeal, Mix  it all up and put in loaf pan top with BBQ Sauce and a couple slices of bacon.  Yummmmm

I always use a pound of ground beef, a cup of oats, 1 egg, half diced onion, a couple shakes of garlic squish it all up, shape it and bake at 350 for about 45 min., top with ketchup bak another 10 to 15 min test with meat thermometer and voila MEATLOAF!

The easziest; 2lbs. Hamburg/ground chuck etc. A pakage of Liptons onion soup mix and two eggs.    Spead ketchup on the top. Oven 325-350 (depending how hot oven heats).  Usually done in 1 hour. Cut in 1/2 for 1 lb.

you can basically put anything in a meatloaf... tomatoes, ketchup, onion, peppers, mushrooms, anything you like the key is to make sure you use an egg a half pound and a sleeve of ritz crackers for every pound and kep an eye on the outside of the meatloaf when it is just krispy then its done.  It will come out perfect everytime.

yummy yummy to my tummy

Easy is my middle name! Quaker Oats original meatloaf recipe is easy and the best I've ever tasted. I grew up with my mom using this recipe and now my adult kids say I make the best meatloaf to be found (if they only knew how easy it is) Make it using the exact measurements and you won't be disappointed. I double the recipe using lean ground beef and put a little sauce on top but it isn't necessary. I've tried the more "elegant" meatloaf recipes but none hold a candle to this one. Hope you enjoy it.

This may not be an "easy" recipe, but it is one my family loves.  And, believe me I have a picky crew.  I created this recipe earlier this year and it is flexible.  If you don't have one ingreient, you can sub another.  This ends up becoming a One-Pan meal, as the vegetables are cooked with it, on either side of the loaf.

MamaNae’s Meat Loaf

1 envelope LIPTON (Recipe Secrets) Beefy Onion Soup Mix

2 lbs. ground beef

¾ cups dry bread crumbs OR QUAKER oatmeal

2 eggs

¾ cup V-8 Juice OR Bloody Mary Mix

1/3 cup ketchup

1 lb. bag Carrots, baby or sliced

2 lbs. Potatoes, cut in 1 inch chunks

1 tsp. Garlic Salt

32 grinds black pepper

1 T. canola oil

1 cup hot water

½ cup barbeque sauce

-Pre-heat oven to 350* F.

-Combine soup mix, ground beef, bread crumbs OR oatmeal, eggs, V-8 juice or Mix,

and ketchup.

-In 9x13” baking pan, shape meat mixture into a loaf and put in the center of the pan.

Set aside.

-In a large bowl, toss potato chunks with garlic salt and pepper.

-Place carrots first, then potatoes around the meat loaf in the 9x13 pan. Drizzle the

oil lightly over the vegetables.

-Just before placing in the oven, pour hot water over and around the vegetables (not

on the meatloaf). Cover with foil.

-Bake for 1 hour. Pull out of oven, remove foil and brush meat loaf with barbeque

sauce. Put back in the oven, uncovered. Turn temperature up to 400* F. and continue

baking for 30 to 40 minutes, or until vegetables are done. Let stand 10 minutes before

serving.

NOTE: Because of the water and vegetables, the meatloaf will not dry out while cooking.

(created 3-8-2009… has Chuck’s (my husband's) stamp of approval )

Hope this helps..........................  Feel free to cretique.

They may take this lady out of the kitchen, but they can't take the kitchen out of this lady.

Hmmm... I just went to the Quaker Oat site... and they had a few meatloaf recipes:

Here is the Classic Meatloaf recipe:

    Ingredients
  • 1-1/2  pounds lean ground beef or turkey
  • 3/4  cup Quaker® Oats(quick or old fashioned, uncooked)
  • 3/4  cup finely chopped onion
  • 1/2  cup catsup
  • 1  egg, lightly beaten
  • 1  tablespoon Worcestershire sauce or soy sauce
  • 2  cloves garlic, minced
  • 1/2  teaspoon salt
  • 1/4  teaspoon black pepper

Preparation

Heat oven to 350°F. Combine all ingredients in large bowl; mix lightly but thoroughly. Shape meatloaf mixture into 10x6-inch loaf on rack of broiler pan.

Bake 50 to 55 minutes or until meatloaf is to medium doneness (160°F for beef, 170°F for turkey), until not pink in center and juices show no pink color. Let stand 5 minutes before slicing. Cover and refrigerate leftovers promptly and use within 2 days, or wrap airtight and freeze up to 3 months.

I have found a fantastic and easy meatloaf that all my friends love. It is called the Bill Blass meatloaf:

Bill Blass Meatloaf

Sauté:  ½ cup chopped onion

            ½ cup chopped celery

            in 1 tablespoon of butter

Mix:      2 lbs ground sirloin or any ground beef. I have found ground round works best gives it more juice and doesn't dry out.

1 egg beaten with 1 tablespoon Worcestershire Sauce

            ¾ cup bread crumbs

            ¼ cup sour cream

            Salt & pepper to taste

Combine all the above ingredients in a large mixing bowl and form into a meatloaf in a baking pan.

Pour one bottle of Chili Sauce (Nance’s is best of the store bought Chilli sauce. If you have home made that makes it even better) over the top and 3 strips of bacon on top. (Optional)

Bake 1 hour and 15 minutes at 350º - basting occasionally.

Serves 6 – can be kept about 1 week refrigerated.  Also freezes extremely well.

I have a FABULOUS meatlof recipe that my husband, who doesn't like meatloaf, LOVES.

Ingredients:

1 1/2 pounds of ground beef

1 small onion chopped

1 bread crumbs

1 cup of milk

1 egg

1/2-3/4 of a teaspoon of sage (I use the 3/4)

1 tsp of salt

1/2 tsp black pepper

Topping:

1/2 cup of ketschup

1/2 cup of packed brown sugar

1 teaspoon of dry mustard or prpeared yellow mustard

1/4-1/2 teaspoon of nutmeg

Pre heat your oven to 350

Mix all your meatloaf ingrdeients together well. I like to put into muffin tins for individual meatloaf muffins. Or you can put in a loaf pan.

Mix together your sauce ingredients. Start with 1/4 tsp of nutmeg, then taste. You can add more nutmeg or more sugar for your personal taste.

If you decide to do meatlof muffins (which my family LOVES) bake for about 30 minutes. Once they are done baking, scoop each muffin out of the pan and set on a cooling rack that is on top of a baking sheet to let some of the excess beef fat drip off.

If using a laof pan, bake for an hour to an hour and a half (checking periodically to make sure meat loaf is no longer pink in the middle). Carefully pour excess grease out of the corner of the pan.

Good luck!

God bless,
Michelle
