Hi Analyticsman, I sometimes fix breakfast foods for dinner. I love spagetti and when I fix it, I often fix 1 lb. and make what I call "pizza spagetti." I mix the spagetti with the sauce, put 1/3 of it in a baking dish, top with cheese and pepproni slices, makeing a total of 3 layers , then freeze or bake for 1 hr. @ 350. If it's frozen I bake it 15 min. mpore. For two of us, I use bread pans/dishes and divide it into 3 batches, eating one and freezeing 2. Lots of luck, Anna

hi again Analyticsman, This is the season for sandwiches,Smile. I love B.L.t.'s on toast. With the tomatoes and lettuce ripe,Smile. Always makes a good meal, to make it more filling, add a sliced boiled or fried egg. Granna2

Lots of fresh veggies and fruit right now. Maybe a nice refreshing salad with crusty bread

Rereading a book is like visiting an old friend.

When we are in a rush, but don't want to just throw in a frozen pizza, we buy Boboli thin crust pizza crust and put whatever we can find on it!  Spread olive oil on bottom, top with fresh veggies and mozzarella or for an asian one, spread with peanut sauce and cut up red pepper, onion, pre-cooked chicken and mozzerrella and crushed peanuts.  Easy, but seems a bit more 'homemade' than frozen pizza!

Nothing beats a good pot of chili. Here in my neck of the woods, we put it over spaghetti and put some cheese on top. Makes a hearty meal, and the leftovers taste even better! Minimal dish use and wonderful flavors, can't beat it!

My Spicy Sausage and Cabbage Packets

Servings 2

Ingredients

½         pound smoked sausage, Polish sausage, smoked sausage or Polska Keilbasa sausage, cut into 1 inch pieces

½         small head cabbage, chopped into large pieces

1-1 ½  cups potatoes peeled, and cut into small bite size pieces

1          medium onion, thinly sliced, or chopped

8          ounces tomato sauce, or 10 ounces diced tomatoes with the same seasonings.

½         cup Worcestershire sauce

2          large garlic cloves, minced (I like garlic most would use 1 clove garlic)

1          teaspoon chili sauce, or Sriracha (Asian) hot chili sauce, or to taste (Optional)

½         teaspoon pepper

1          teaspoon garlic powder

Salt and pepper to taste

Directions

1.         Heat grill to medium heat.  Or heat the oven to 400 degrees.  Cut four 18 X 12 inch pieces of heavy duty foil.  Divide sausage, cabbage, onions, and potatoes evenly onto each piece of foil.

2.         In a 2 cup measuring cup, combine tomato sauce, Worcestershire sauce, garlic, chili sauce, and pepper; mix well.  Spoon evenly over sausage and vegetables. (I use about ¼ to ½ cup sauce per packet)  Wrap each packet securely with double fold seals, allowing room for heat expansion.

3.         When ready to grill, place packets on grill over medium heat or in the oven at 375.  Cook 30 to 40 minutes or until cabbage and potatoes are tender.  Open packets carefully to allow hot steam to escape.

Notes  You can also use turkey keilbasa sausage

Call me crazy but this really is fast and delicious.  I at 5 myself.  I make spagetti tacos once every couple of weeks.  Its just hamburger meat, spagetti sauce, spagetti noodles, cheddar cheese, sour cream, (pretty much whatever you want to put on a taco) and hard taco shells.  Just layer the noodles in the shell with everything you want to top it with and you have your spagetti tacos.
