Lunch and Inspiration

Cool I got in, I work for a soup kitchen and need recipies to feed 50 to 70 on a VERY tight budget. I won't have a box of bisquick , or a can of 'ready made' anything. I am at the mercy of whatever the food bank has. I prep it all from scratch. I'm pretty good at multiplying a recipie and do it all from soup to nuts. Can you help? I've been doing this 6 months and winging it.

Sounds like you do really important work.  Feeding many with very little is a challenge.  The key here is combining fiber (maximize it) to create a filling dish and to add protein (even a little bit) to provide "stick to the ribs" satisfaction. 


Good foods to use are:


-brown rice (great in a stir fry)


- garbanzo beans (great in a salad or stew)


-fortified noodles


-black beans


-tuna


-eggs


So, try stir fries, curry with rice, black bean tostadas, fish cakes, vegetable quiche, frittata

I would also seek out in-season produce.  Perhaps there is a farm or two that would join the mission and agree to donate some produce (after farmer's market closes for day?).  By using what's in season, you're going to save money.  I hope this helps!
