Dollars & Cents & The Casserole Comeback!

Two things:

(2) After I read this piece-Casseroles Make Comeback as Easy, Quick Meals for the Cash-Strapped

I felt motivated to make a casserole to feel trendy. (ha, ha!)

I ended up going with the "Healthified" Chicken Tortilla Casserole

I was alittle low on tortillas- so I put in what I had- and after it came out- I put some tortilla chips on the plate (fun to eat that way). The hubby loved this!Plus, I thought leftovers were great the next day.

Hi CateC, I have started using left over cooked meat in other ways. Stir-fry and cassroles/pot pies. I like to use my left over chicken in a pot pie, but since it dosen't have a bottom crust, I guess it's a cassrole?!? This is really a Paula Dean recipe, except I changed the vegtables. 2c.cooked cut up chicken, 2 c. mixed frozen vegtables ( I take out the green beans, I don't care for frozen green beans in it), 1 can cream mushroom soup,1 can cream of celery or chicken, mix together, pour into a buttered cassrole dish, In another boul mix 2 c. bisquick and 1 c. mile, it will be thin, but thats O.K., pour on top of the chicken mixture. Melt 1 stick butter and pour on top of the bisquick  and Bake at 350 for 1 hour or untill brown on top. I double this ,but not the crust. My family loves it. A have also made it with left over beef and beef grave and cream of mushroom soup. granna2

I recently made a baked ziti casserole - ziti, broccoli, leftover chicken, and a white sauce. Yum!
