A GREAT Winter Soup:   2 cans Minestrone Soup (I use Progresso or Campbells Chunky), 1 can of Kidney beans rinsed, 1 can of diced tomatoes (I usaually use flavored with Oregano/or garlic and onion), 1 small bag frozen mixed vegetable (or you can use canned-I prefer the fresher and healthier version of frozen) bring to a boil in Pot and simmer for about 30-45 minutes and VOILA a light helthy meal.  I serve with some type of Bread and butter and/or Salad.  for a variation I use the soup with Chicken or I boil 2 chicken breasts cut into small pieces and add to soup at the beginning (I boil them first to make sure they are cooked throughly and then add to soup so as the soup boils the chicken becomes more tender and picks up the italian flavor).  This is a variation on a Low Fat Soup I got at Weight watchers and is it Filling. It makes enough for 4 regular sized bowls of soup.   ENJOY!!!!

One of our favorites is ham gravy and biscuits. I use regular honey ham lunch meat (sliced thin), generic brand butter flavored biscuits and homemade gravy. It's filling and it's inexpensive. In my house (3 teens and a husband with healthy appetites) that's a plus!!!

My grandmother's "Mexican Goulash."  It is also SO EASY!  Brown 1 lb of hamburger meat and drain.  Throw in 1 can of corn (do not drain), 1 can of Pork-n-Beans or ranch Style Beans (do not drain) and 1 packet of taco seasoning mix.  Let it simmer for about 20 minutes.  Cook some cornbread while it's simmering.

Serve the goulash over some cornbread....so good!  Very cheap dinner as well!  Serves 4.

Enjoy!

We use this recipie every time we have extended family members visit.  Double or triple the recipie, add/decrease ingredients to your tastes. Goes far and there's usually leftovers for a quick lunch the next day.  Add a salad, garlic bread and fruit for dessert!  The flavors develop overnight and my husband says it tastes even better cold the next day.

Does anyone know where I can submit the recipie to have it nuttitionally analyzed?

Not sure if this is under $10.00, but I was able to stretch six chicken breasts(on sale for $1.29 lb.) into three meals for the four of us this week. Big Smile

I boiled chicken for chicken and dumplings (Bisquick of course)  and used the rest to make up a huge batch of enchiladas. one for this week and one for later.

I read somewhere that buying chicken on sale and shredding it helps save money. I wasn't sure I'd like doing this, but it was easier both to shred all at once while it was still hot.

We even added a little to rice for the dog. Yes

We normally would have barbecued the chicken for one meal and maybe a leftover.

Sausage/Saurkraut and Potatoes

1 Jar of Saurkraut, 2 cans of whole potatoes (drained) or the equivalent of fresh potatoes and 14 oz of kielbasa sausuage.

Put in a slow cooker and add one cup of water. Cook on low for 6 hours.  Cheap and easy.
