Hi tklove, you almost have me stumped! You could make your chicken with breading. Plus you could add broccoli, just cut the florets small enough to mix with your mom in laws mac and cheese. To bread your chicken: If a whole chicken cut into pieces, ie:legs, breast, etc... You'll need:
Breading- you can make your own by cutting your white bread (without the crust) into small cubes, toast in oven for a few minutes, then put in processor, to make fine. Or store bought container. 3 bowls, bowl 1- breading, bowl 2- italian dressing vinagrette or vinegar, oil, and spices, bowl3- bisquik or flour (bisquik is better).
Dip pieces into bowl 1, then bowl 2, and finally bowl 3. Fry pieces in frying pan on medium high heat with either virgin olive oil or reg. cooking oil. Fry until chicken is cooked thoroughly. You may have to sear meat first then add water and slow cook or simmer till chicken cooked, if your careful your breading will stay on.
In pot, boil broccoli or steam cook broccoli. When broccoli cooked(tender) gently add to mac and cheese. Your mother-in-law shouldn't mind your adding the veggies to her side dish.
Hope I was able to help you for dinner tonight. I know what it's like to have to come up with dinner for guests ( much less your mother-in-law) and drawing a total blank. If this is not the way you planned on going, let me know and I'll rack my brains for another idea. By the way, if you don't have broccoli you can use cauliflower, if all you have is a combo, then ask your mom-in-law to make her cheese sauce a little creamier or make a little extra sauce. Also if you want, make some instant rice to go along with that. Broccoli tastes good with rice and some butter. Good luck!
