I am looking for a recipe to have for dinner tonight.  My mother in law is making the side dish.  Macaroni and cheese.  I have to make something with chicken.  Everything that looks/sounds good already has pasta in it or just doesnt sound good with mac and cheese.  HELP???????

Hi tklove,  you almost have me stumped! You could make your chicken with breading. Plus you could add broccoli, just cut the florets small enough to mix with your mom in laws mac and cheese.  To bread your chicken:  If a whole chicken cut into pieces, ie:legs, breast, etc...  You'll need:


Breading- you can make your own by cutting your white bread (without the crust) into small cubes, toast in oven for a few minutes, then put in processor, to make fine.  Or store bought container.  3 bowls, bowl 1- breading, bowl 2- italian dressing vinagrette or vinegar, oil, and spices, bowl3- bisquik or flour (bisquik is better).


Dip pieces into bowl 1, then bowl 2, and finally bowl 3.  Fry pieces in frying pan on medium high heat with either virgin olive oil or reg. cooking oil. Fry until chicken is cooked thoroughly.  You may have to sear meat first then add water and slow cook or simmer till chicken cooked, if your careful your breading will stay on.


In pot, boil broccoli or steam cook broccoli.  When broccoli cooked(tender) gently add to mac and cheese.  Your mother-in-law shouldn't mind your adding the veggies to her side dish.


Hope I was able to help you for dinner tonight.  I know what it's like to have to come up with dinner for guests ( much less your mother-in-law) and drawing a total blank.  If this is not the way you planned on going, let me know and I'll rack my brains for another idea.  By the way, if you don't have broccoli you can use cauliflower, if all you have is a combo, then ask your mom-in-law to make her cheese sauce a little creamier or make a little extra sauce.  Also if you want, make some instant rice to go along with that.  Broccoli tastes good with rice and some butter.  Good luck!

Sometimes I add a green onion to the center.
Stuffed Chicken
4 boneless chicken breasts
Salt and pepper
6 to 8 oz cream cheese
4 slices bacon
1 tbsp oil
1 tbsp butter

Flatten chicken between 2 pieces of plastic wrap. Season with salt and pepper. Place cream cheese in center of each breast. Roll up, tucking in sides, then wrap each breast with a slice of bacon, securing with toothpicks. Cook in oil and butter on all sides until done.





 


Baked Swiss Chicken


4-6 boneless chicken breasts
Pepper
8 slices Swiss cheese
1 can cream of chicken soup
1 can cream of mushroom or cream of celery soup
1/2 cup milk
1 box Stove Top Chicken Stuffing Mix
1/2 stick butter, melted

Cut chicken into pieces and place in a sprayed/greased 9x13 pan. Sprinkle chicken with pepper. Place cheese over chicken. Combine soups and milk, then pour over cheese. Sprinkle stuffing mix over soup mixture. Drizzle butter over stuffing. Cover with foil. Bake at 350 degrees for 1 hour. Remove foil during the last 15-20 minutes of cooking to brown the top.


 


 



Chicken Pot Pie


3-4 cups cubed cooked chicken
1 (16 oz) pkg frozen peas and carrots
2 hard boiled eggs, sliced
Salt, pepper and garlic powder, to taste
2 cans cream of mushroom or cream of chicken soup
1 cup chicken broth or milk
2 cups Bisquick mix
1 1/4 cups milk
1 tsp garlic powder
1/2 stick butter, melted

Place chicken in a sprayed/greased 9x13 baking pan. Top with veggies then eggs. Season with salt, pepper and garlic powder. Combine soup and broth then pour over casserole. Combine Bisquick, milk and garlic powder then pour over casserole. Drizzle butter over crust. Bake at 350 degrees for 35-40 minutes until crust is golden brown.


 



Chicken Piccata



2 boneless chicken breasts
Salt and pepper
Flour
1/2 stick butter
1/4 cup oil
Sauce:
2 tbsp butter
1/2 cup chicken broth
1/4 cup lemon juice
1 tbsp capers


Pound chicken thin and cut each piece in half. Season with salt and pepper. Dredge chicken in flour and shake off excess. Heat butter and oil in skillet. Cook chicken 2 to 3 minutes on each side until lightly browned and done. Remove chicken to platter.
For sauce, add butter to skillet, scraping browned bits from bottom of pan. Add broth, lemon juice and capers. Bring to a boil, stirring for about 1 minute, until sauce reduces and thickens.


 



Ritzy Chicken Casserole



6-8 boneless chicken breasts
Salt and pepper, to taste
1 1/2 sticks butter, divided
8 oz. cream cheese, softened
1/2 cup sour cream
1 can cream of chicken soup
1 can cream of mushroom or cream of celery soup
2 sleeves Ritz crackers, crushed


Cut breasts into several pieces. Season with salt and pepper. Saute chicken in skillet with 1/2 stick butter. Transfer cooked chicken to a 9x13 baking dish.
In a bowl, combine cream cheese, sour cream, and soups. Pour soup mixture over chicken.
Melt remaining stick of butter in skillet. Add crackers and stir until coated. Sprinkle crackers over soup mixture. Bake at 350 for 30 minutes.


 



Crispy Chicken


3 cups Rice Krispies or Corn Flakes, finely crushed
1 tsp. salt
1/2 tsp. pepper
1 tsp. paprika
1 fryer, cut in pieces
1/2 cup mayonnaise

Combine cereal, salt, pepper and paprika in a large plastic bag. Pat chicken dry then brush all over with mayonnaise. Place pieces, one at a time, in bag and shake to coat then place on sprayed broiler pan. Bake at 425 degrees 40-45 minutes. Small pieces will cook faster.
