We wanted to start a new “Introduce Yourself” thread. (Just to see who is active!)

These are some things Mere and I would love to know about you:

(1) What kind of cook/baker are you? Do you have any specialties? If so, what are they?

(2) What brings you to the community?

(3) Describe your kitchen in 5 words.

(4) What kitchen appliance can you not live without?

Hi, just stopping in to say hi & hopefully make a few friends.  My husband & I share cooking duties (he a great griller, esp. ribs), I mostly like to try out new recipes that aren't too wild or off the wall. My son can be a pain when something different comes along. 


I love to go yardsaling & find old cookbooks and try out some of those recipes.  I have books from the 30's that are just neat.


My kitchen is very user-friendly, just not as organized as I would like it to be.  I put it to use all the time.  I couldn't do w/o my crockpot....... I make chili, pot roast,soups,etc.  Its great, I can start dinner in the a.m. & have it finished with no trouble in the p.m.


I found this site while looking for recipes & checking out coffee sites.  I LOVE coffee, especially iced.  I love my coffeemaker/grounder. I'm always making homemade iced coffee & looking for recipes for new ideas to try. 


I have 4 children from 23 to 9 years old & 2 granddaughters, 5 & 2.    I'm at home most of the time, I don't drive so I don't get out often.  I hope to get to know some of you this year.  Have a great day!

amychef2698: Cheese and Garlic are two of my favorites also!  Yum! I think it’s great you have curious and helpful young cooks!

JoJoA: Easy to clean floors? I wish every kitchen had that! I would start a new thread on the recipe you are looking for (it brings more attention to it). I can look into it though… It may take till next week though for a response!

SpazzedMama: Hehe- I like your user name. That is cool you are finding some great classics in yard sales and such! If you try them- let us know, how you made them, and how they turned out! Also, there was a convo started in the Cooking and Baking with Kids about fussy eaters… I would check it out when you have a chance!

Hello right now my kitchen is a mess.On Jan 3 2009 I had a storek, now I need to learn how to cook again.   Now I need help on easy meals that I can with one hand. My left side dose not work as well as it did. And I love to cook. If anyone can help or been thur this please let me know. Right now I feel helpless.My name is Cindy

I'm Phyllis, and I've been cooking/baking since I was big enough to reach the counters. LOL I always spent time in the kitchen with my mother, when she was cooking.  Being a baby boomer, everything was made from scratch and took lot's of time.


I am best at baking and comfort foods.  Even with a full time job, I make a big meal daily. I love to read old cook books and spend time in the kitchen.  I have many books that my grandmother used and enjoy going back in time.  It gives me an appreciation for all of our modern times.  My kitchen is warm, friendly, inviting, well stocked, and has new applianced, which my husband was so nice to provide as a surprise, knowing that I spend a great deal of time in my kitchen. 


The one appliance I can't live without would be my combo oven/convection oven.  It was a real time saver during the holidays. 


I believe that cooking should not be looked at as work, but an expression of love for my family.  I enjoy baking cookies for my employees, and at one time I did specialty cakes for an in home catering business.  Baking is sometimes a creative art or can be looked at as such. 


I'm looking forward to hearing about everyone who loves  some of these same things.

Hello,  I'm really a retired cook but I still like reading all the recipes.  I at ONE TIME OWNED 2 RESTURANTS SO I have done my


share of cooking.  I am reall not able to do much cooking st this time.  I do miss cooking so much tho.  I have COPD.  Hope


to be better soon and I will plemty of recipes to cook!!!


 


I have a regular kitchen.  Nothing special,  but I do like my food processer.  Makes cooking easier.  MY DH really uses it a lot.


I have taught him how to cook and he does good.  Alot of Southern food.  From SC. 


 


I do have some good recipes. Let me know what to send and I will try to get it to you all.

I don't really have any specialty in the kitchen I just like to cook when I get the chance.


I'm here to hopefully find recipies,new ways to cook things etc.


Really not much to explain.


Pots and pans


I try too cook for my mom and brothers, when we can agree on a family meal, normally it's a cook whatever night...lol. I try to cook someting everyone likes, and that can get tough sometimes.

I realize when I buy gifts and or do “gifts of time”-for loved ones... 90% of them are usually food related.

Hi! My name is Grammyvb, I am a scratch cook from the old school. My mother taught me alot about cooking and baking, which she did for all nine of us kids.


Now it is just me and hubby most of the time. But when my grandsons come to visit they want fresh bread with my homemade jams and jellies.


I love to make and try new recipes that I make up or remake something into ingredients that we all keep on hand. I love baking from scratch and making new and interesting things with mixes.


I need help with breads, as I can not eat whole wheat, but I found a super recipe for "Easy No Knead Wheat Bread" and wondered if it would work as well with white bread flour? Would I have to use a gluten with it?


I love my mixer with all its attachments and my mini immersion blender, don't think I could go back to the old way after using these two. I love my crockpots too!


I love breads, cakes and pies from scratch, and homemade fudge and handdipped chocolates. I know I need to behave but they are sooo good!

I enjoy trying new things, for two.  Also when the family is all home. I love to cook.


I thought it would be nice to share ideas,recipes etc.


My kitchen is short on counter space


I would not want to be without my oven


I have 10 grandchildren and my husband and I like to garden.  I like to read and I do some volunteer projects in our community.

I don't know what you are using for a recipe, but I have this one for white no-kneed bread from the New York Times:


No-knead Bread



3 cups bread flour

1 packet ( 1/4 ounce) instant yeast


1 1/2 teaspoons salt


Oil as needed.


1. Combine flour, yeast and salt in a large bowl. Add 1 1/2 cups water and stir until blended; dough will be shaggy. Cover bowl with plastic wrap. Let dough rest about 4 hours at warm room temperature, about 70 degrees.


2. Lightly oil a work surface and place dough on it; fold it over on itself once or twice. Cover loosely with plastic wrap and let rest 30 minutes more.


3. At least a half-hour before dough is ready, heat oven to 450 degrees. Put a 6-to-8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven as it heats. When dough is ready, carefully remove pot from oven. Slide your hand under dough and put it into pot, seam side up. Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes.


4. Cover with lid and bake 30 minutes, then remove lid and bake another 15 to 30 minutes, until loaf is beautifully browned. Cool on a rack.


Yield: 1 big loaf.

This is Grammyvb, thank you Eemma for the recipe for no knead bread. I am going to try it early next week and I will let you know how it comes out.

Do you think this would work in a dutch oven? I have several black pots that I use for dutch oven cooking and find they make ideal rolls, cinnamon rolls etc. How deep does the pan need to be?

Hello, I'm a sweets girl.. I enjoy baking and i've been looking for new recipes for yummy desserts.  Also, have 6 m.o. twins, so I need quick dinner ideas.


I've come to the community today because i'm having a problem.. i need substitute ideas for the recipes i have.  not one in particular, but i've come across so many recipes and it tells me to use some mix .. the prob is that i'm not in the states and i don't have access to that sort of thing..  i was looking in my recipe box and found a recipe i want to use, i thought it was funny that it had under substitutions it said if i can't find chunky tomatoes with red pepper, then use regular chunky tomatoes and get some red pepper seperately.. uh.,. i think i could have figured that one out on my own (LOL), but i don't know what's in the mix that i was told to use  (it's for jambalaya)  i don't have the recipe in front of me, but that's just an example anyway..


how do i find appropriate substitution suggestions?

Welcome to the Message Boards! 


There are a lot of places to find recipes for "home made mixes" on the net.  I usually have good luck finding out how to make my own mixtures by using Google search using the words "copycat" and the name of the mix.  If you get stumped I'm sure you will be able to find someone here that can help you with a specific mix if you need it.


By the way, if it's a Cajun spice mixture for your Jambalaya that you need it is mostly cayenne pepper and salt, along with much smaller amounts of  onion and garlic powder, bay leaves, thyme, sweet basil and  chili powder.  I usually just salt to taste and use cayenne pepper for seasoning mine as well as use chopped/minced onion and garlic when I am cooking the meat instead of using the powders.

(1) What kind of cook/baker are you? I love baking sweets but I'm becoming more interested in breads. Do you have any specialties? Red Velvet Cake...everyone wants it for their bday at our house!

(2) What brings you to the community? Mainly to find vintage recipes and to talk with others about recipes

(3) Describe your kitchen in 5 words. Large, simple, dated, clean, busy!

(4) What kitchen appliance can you not live with out? My Bosch stand mixer!


(5) Anything else you want to share with everyone. I'm a home cook constantly adapting to living with chronic back pain and fibromyalgia. I love to try new gadgets to make my cooking more comfortable! And I'm falling in love all over with my 1980 printing of the 5th cookbook edition, the one I got when I was married (but I glued it together with baby formula years ago so had to recently buy another one off of ebay).

Hi! My name is Jennifer, and I am a School Psychologist. I am newly married, and have found a joy in cooking and baking.  My husband is a picky eater, so dinner is tricky.  He LOVES dessert though- so baking is my time to shine.  I love to try new recipes and share my creations with others. There's no greater feeling than passing along something you made with love, and watching others get joy out of it!

I am a newbie! I really love baking. Because I am a newbie, I wouldn't say I have specialty yet- but I am very interested in learning any and all tips and tricks to baking, decorating, etc.
