homemade jam

Hi Everyone,

   I was wondering if anyone could help me out. I want to make a batch of blackberry jam and the recipe calls for so much sugar I want to cut back on the amount of sugar. The recipe that I use is like 7 cups of sugar to 5 cups of crushed berries plus the sure jell. Thanks

Sure-Jell and Ball make pectin for low sugar or no sugar jams that will set up with less than half of the sugar called for in your recipe.  I think you can use up to 3 cups of sugar with the low sugar pectin.  The box has instructions on it.  A friend told me she cooks the fruit down some before adding the sugar, pectin and lemon juice. She said it sets up better when using less sugar.

grandmasgirls, I have made it with 1c. less sugar, but sure-jell dose not recomend that you do that ?!? I think because it may come out thiner?!?I to think that they make a sure-jell that calls for less sugar. You can make it the old fashioned way and not useing sure- jell at all, but is very time consumeing, you have to boil it untill it gets thick, test it by putting a spoonfull or so on a plate and letting it cool to see how thick it is. My Aunt used to do it that waySmile

hi, I will pass my laugh onSmile. I just made my first batch of blackberry jam that didn't jell, it's very runny!. It's even to thin for syrupSurprise. In reading this I just realised whyConfused, I used the recipe for low or no sugar, but used the regular sure jell, i didn't know that there was one made for low or no sugar,Big Smile. The taste is good, so I might try boiling it untill it's thick, like they used to years ago.

hi granna2 if its not cold yet get some  jel ease fruit pectin and add it it now just warm it up alittle and you will be good to go or all a little sugar and the pectin (((  o how i with the would stop changing things i know what i need i run into the store the color on the box is wrong or they stoped making it. if it ant broke then dont fix it.) give us back our true and tried things that we know works. like lie soap i love that stuff and have it in one of my books here it made you clean from top to toe. i remember  10 cent soda pop and 3 cents if you bring the bottle back and 25 cents for gas.will i'll move on now and check out more of the boards and recipes.O how do you get to the really old ones please tell me. thanks

happycooking, I hate to be the one telling you thisTongue Tied, you just told your ageWink. when you started remembering "all those cheap prices",Smile. Seriously, I to get "tired"of so many changes, that weren't even 'needed" in the first placeAngry.  Maybe we should start a post about  "pet-peves", hahahha. It's to late, it's coldSmile, I have decided to just use it as syrup, the taste is really goodSmile.

Wow, you guys share some awesome recipes!!!  Makes me hungry reading them.  If anyone's interested I have a recipe for making qick and easy syrup and/or ice cream topping.  It gets too expensive during the summer buying ice cream toppings, so I make my own, and guess what?  It's not from scratch either.  Let me know.     chicagosinger

Getting back to my reason for the post--Start a new topic and just write your recipe for the Ice cream topping.  Before long there will be several, I have one and I can almost bet that there are two other ladies will have some pretty good ones.
Not only do we have two ball games today we have the Arlington Million! And a beautiful sunny day.

Heyyyyyyyy mittens !  The Cubs better win to make up for the WS failing record.You going the Million?  You must live in my neck of the woods.  Thanx for the idea I think I will.  Probably a little later today as I'll be in the studio for a few hours rehearsing for a show. Check for it later, you'll surprised as to how simple it is.   Yet it took me 5 years for it to click.

My husband makes grape jam, which is used on pancakes, and such. We cut back on the sugar, but it's  delicious to pour onto things. It goes fast.
