my mom is looking for a oatmeal raisin cookie recipe from that cook book 1960. She finally threw hers out when we got her a new one. However the new cookbook doesn't have the old recipe in it. Is there anyway you could look up the recipe for her? It is a recipe that calls for boiling the raisins..... Thanks
I have a 1960's Picture Cookbook, but I can't be sure of the date because the title page was lost a while ago. But here is the recipe for Old Fashioned Raisin Cookies from my book. Hope it's the right one!:
1 c. seedless raisins
1 c. water
3/4 cup shortening
1 1/2 cups sugar
2 eggs
1 t. vanilla
2 1/2 cups flour
1/2 t. baking powder
1 t. baking soda
1 t. salt
1 t. cinnamon
1/2 t. cloves
2 cups rolled oats
1/2 cup chopped nuts
Simmer raisins in water over low heat until raisins are plump, 20 to 30 minutes. Drain raisin liquid into measuring cup. Add water to make 1/2 cup. Heat oven to 400. Cream shortening, sugar, eggs, and vanilla. Stir in raisin liquid. Blend flour, baking soda, baking powder, salt, and spices; stir in. Add rolled oats, nuts, and raisins. Drop rounded teaspoonfuls 2" apart onto ungreased baking sheet. Bake 8 to 20 minutes. Makes 6 to 7 dozen.
