Corn Muffin Mix Copycat Using Bisquick


You see many casserole etc. recipes online that use a box of Corn Muffin Mix


in the ingredients. Here's a copycat recipe that is equal


to one 8.5-oz box of Corn Muffin Mix.


 


You can use this copycat in recipes calling for a box of Corn Muffin Mix


or add milk and an egg and make 6 corn muffins.


 


 


Corn Muffin Mix Copycat Using Bisquick 


equals one 8.5-oz box of corn muffin mix, make 6 corn muffins


 


Ingredients


2/3 cup Bisquick baking mix


1/2 cup yellow cornmeal


2 tablespoons granulated sugar


1/3 cup milk


1 egg


 



1. Using whisk, mix dry ingredients in mixing bowl.


2. Use above mixed dry ingredients in recipes calling for a box of Corn Muffin Mix.


 


3. If making corn muffins:.


4. Preheat oven to 400-F.


5. Stir in milk and egg. Stir until lumps are gone.


6. Fill standard muffin cups half full.


7. Bake 15-20 minutes or until muffin tops are slightly browned.


8. Makes 6 corn muffins.

Here's another copycat recipe for Jiffy Corn Muffin Mix from scratch.


 


Jiffy Corn Muffin Mix copycat from scratch

equal to one 8.5 oz box of corn muffin mix, makes 6 muffins

2/3 cup all-purpose flour
1/2 cup yellow cornmeal
2 tablespoons granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
2 tablespoons vegetable oil
1 egg
1/3 cup milk

Directions
Preheat oven to 400°F.

Combine flour, corn meal, sugar, baking powder and salt. Mix well with whisk.

Whisk in vegetable oil and mix until dry mixture is smooth and lumps are gone.


Add above dry mixture to recipes calling for a box of corn muffin mix.


To make corn muffins, continue with instructions below.


Combine above mixture with egg and milk and mix well. Batter will be slightly lumpy.

For best rise, let batter rest for 3 or 4 minutes. Stir once or twice after rest.

Fill muffin tins 1/2 full.

Bake 15-20 minutes.

Makes 6 muffins.
