Birthday Cake for a diabetic

My Mom is turning 84 on Wednesday and she's diabetic.  All she wants is a good cake that she can eat.  Does anyone have any good receipes?

i think you should make a cake recipe using SPLENDA, instead of sugar.. Anyway is not healthy for your mom to eat a lot of cake!..  whish her a happy B-DAY!

You can use splenda. Use an Angel Food cake resipe using spenda instead of sugar. Then, take 1- 8 oz. package of cream cheese and 1- 8 oz. of cool whip. Let the cream cheese come to room temperature and cream it, add sugar substituet, and the fold in the cool whip. Chill in the refrigerator. Spread evenly over the cake. Then you can take any fresh fruit to spread over the top. If you can get sugar free pie filling, strawberry, cherry, or blueberry it is quite tasty.

While Splenda is wonderful, it doesn't always give good results when baking unless the recipe was created for use with Splenda. If you want to use a regular recipe, substituting xylitol for the sugar works very well. Since I am diabetc it has become the main sweetener in my house. Even my non-diabetic Splenda, Equal, and Sugar Twin hating husband uses it.

Here's an idea...This is from Betty Crocker's Diabetes Cookbook (hope they don't mind that I just scanned it - I was too lazy to type all this). :)  I have not personally made this recipe, but all other recipes I have tried from this book have been wonderful.   Check your local library to see if they have a copy you can peruse if you want to see more.



Oh, and they also have a cheesecake recipe that looks wonderful too!
