What could taste better in the summer than chilled lime-flavored cupcakes with cream cheese frosting? These Key Lime Cupcakes start with a cake mix to which lime-flavored gelatin and Key lime juice are added. After baking, they are poked with a toothpick and a glaze of powdered sugar mixed with Key lime juice is drizzled over the tops. I just read about a school where selling snack foods during the lunch period set off a parental brouhaha, since the practice conflicted with rules about healthful eating that the school had previously adopted.  The school did not allow for these types of snacks to be sold, or even to be eaten in classrooms for celebrations.  The rules also prohibited teachers from giving students candy. I positively adore watching those cake decorating contests on television and just marvel at the ingenuity of the decorators crafting these tall and elaborate masterpieces.  A few years ago I took a cake decorating course where I learned the basics.  Each week we were to bring a cake to frost and design.
