I don't know what the weather is like by you, but here in North Carolina it's blistering already. We will have a week solid of almost 100 degree weather. It's enough to melt ya and it's only early June! When it gets that hot I really don't care to sit down and eat a big steak after working in the yard and sweating all day. I prefer something lighter. That being said .... we visited my brother Brad in Austin a couple of years ago and went to a Tex / Mex restaurant that had the best Fish Tacos that I had ever tasted. They would not give me the exact recipe but got me close. When we returned to Charlotte my wife Kim went to work and came up with a version that could rival their's. It's a perfect hot summer time grill dish that we want to share. I have attached the recipe along with a shot of my baby doing the modeling. Enjoy!
P.S. We have picked the next date and site for BBQ competition. It will be "Smoke on the Mountain" in Galax, VA. It's held July 11th and 12th. I'll keep you posted.
Austin Fish Tacos (Feeds 4):
- 2 Tsp Chili Powder (Ancho is best but any will do)
- 1 Tsp Ground Cumin
- 1/2 Tsp Salt
- 4 Small Tilapia Filets
- 1/2 Cup Sour Cream
- 1 Tbs Rice Wine Vinegar
- 1 Tbs Orange Marmalade
- 1/2 Tsp Salt
- A Few dashes hot Sauce
- 1 Small package of pre- cleaned / cut Broccoli Slaw
- Bag of small Corn Soft Tortillas
- Bunch Cilantro
- 1 Lime
Mix the first 3 spices together and rub on fish
Combine the next 5 ingredients together and then add to slaw
Grill fish about 5 minutes per side on Med temp grill
Place a half fillet on a small tortilla / top with slaw mixture / a touch of Cilantro and a squeeze of lime
You are good to go … light and tasty :)
