This weekend I'm in charge of our little one as Kim works at the hospital. I will have a list of activities planned to keep things moving. We will hit a bucket of range balls, go to the local drive-in for lunch, visit the ice cream shop, and even see a movie. It's good to keep her busy … trust me. So you say: "no time to cook a nice dinner?" Get real … plenty of time in fact all you need is about 20 minutes.
How about an Asian flair Scallop dish? Just get some Jumbo Scallops. Salt and Peeper them. Put on a hot grill for about 2 - 3 minutes per side. Then top with some Asian Duck Sauce from your grocer. Serve with some boiled or steamed rice with a splash of Soy Sauce and then frozen peas. That's it … done! You can add some red pepper flakes if you want some spiciness like I do but regardless it's healthy, tasty and quick. Eat you heart out Rachael Ray!
PS Here is a tip with Scallops - Get "Dry Packed" when you can. They do not have extra preservative fluids and actually sear / cook much better!
