Wedding Dessert Buffet: Cake Truffles

Long weekends are great for weddings, especially ones where many guests are traveling.  My sister, Liz, went to a wedding this past weekend in Pittsburgh, Pennsylvania.  The bride and groom are her neighbors in suburban Washington, DC.  They live just a few doors down from Liz and her husband John, who are newlyweds themselves (and served amazing chocolate peanut butter wedding cake at their beautiful reception).

Because she knows that I love anything sweet and chocolaty, Liz sent me an email to share her recent baking project with me.  Her friend, the bride, was planning an elaborate Viennese table at her reception, and Liz volunteered to make some goodies.  The bride tasked Liz with making Cake Truffles (sometimes these are called Cake Balls), which are delicious and deceptively simple to make.  The recipe called for Liz to bake cakes according to cake mix directions, crumble warm cake in a large bowl, add a tub of frosting, mix well and place in freezer until firm.  Once cake is firm, form balls and dip in melted chocolate.  Top with a drizzle of frosting, nuts, coconut or anything else you can dream up.  Liz made milk chocolate truffles and topped them using white Betty Crocker Cookie Icing in a squeezable tube. 

The elaborate dessert trend continues to be strong in the wedding industry and is not likely to go away soon.  Brides are offering guests truffles stations, dessert bites passed on trays, and full-service ice cream sundae bars.
