Eating for Diabetes. Not an easy thing. A recent question prompted me to search for streusels that work for diabetes.
"CAN YOU HELP ME PLEASE? I WANT TO MAKE A STREUSEL THAT IS SUITABLE FOR THE DIETS OF PATIENTS LIKE THE DIABETICS."
Most streusel toppings are high in fat and carbs, not exactly what someone with diabetes wants to be eating. Back to Diabetes 101. The key to diabetes management is to eat carbs throughout the day, balancing them with the amount of protein and fat and keeping calories in check. When looking for recipes:
1. High in fiber is good. 3g of fiber or more is terrific. To get ...

Who says beauty is only skin deep? There is much more to your skin than what others see on the surface. Your body’s largest organ, your skin plays a very important role in regulating fluids and temperature. It contains the nerve endings that let you know if something is hard or soft, hot or cold, dull or sharp. Healthy skin is the sign of a healthy body. For optimum skin health:
1. Get adequate amounts of rest (this is one I find easier said than done). Strive for six to eight hours a night.
2. Drink lots of water and other liquids to help regulate the body’s fluids and temperature.
3. Don't smok...

When first diagnosed with diabetes, where do you start? Overwhelming, I know. When you come back to reality, you think, "How will I cope? What will I eat?" As I was compiling the first Betty Crocker Diabetes Cookbook, I met a woman who'd been diagnosed with diabetes at 10 years of age, over 40 years ago. As she was in the hospital having tests run, she said to her Mom, "The nurses say I have diabetes, what does that mean?" Her Mom said, "It means our whole family is going to be eating healthier." Wise woman, that's exactly what we recomend, that the whole family adopt a healthy eating and exercise plan, it's better for everyone....

Questions I often get are "Why are some foods so high in carbohydrates? Why do I need carbs, anyway?" There is a lot of confusion-therein an opportunity to do a little primer-all food is classified into 3 main nutrients: protein, fat and carbohydrates. If the food you're eating is not protein, like meat or poultry and it's not a fat, like butter or oil, then it's likely carbohydrates, like grains, pasta, rice, fruits, vegetables, milk and sweets. Carbohydrates are necessary for good nutrition because they give us the energy our bodies need and provide important nutrients like vitamins and minerals. Eliminating or severely restricting carbohydrates re...

My life has been so crazy lately that I haven't been able to blog for about a month. It's year-end at General Mills and we are eveloping many new products, recipes and photos, even as we speak. No matter who we are or what kind of lifestyle we live, we all have to deal with innevitable stress at times, it's in fact a normal part of life. The key to dealing with stress is to manage it. As I thought about my coping skills and how I could balance all the things I needed to do, I remembered the wonderful tips in the Betty Crocker Cookbook for Women:...

I am always, always, trying to work grains into every food category I possibly can from appetizers to desserts. In case I haven't mentioned it, I just love whole grains. How could I help it?
I grew up on a grain farm in the middle of North Dakota, whre my family planted wheat, barley and oats. My mom was experimenting with wheat germ and triticale long before most people had even heard of them, let alone knew they were grains. While at college, (NDSU), I worked for an oat and wheat breeder, planting seeds, watering, fertilizing, harvesting, milling and counting (yes, counting) the finished grains to determine the yield of...

Consumers have a hard time getting Quick & Easy, (let alone Healthy) dinners on the table that their kids will eat these days. (Heck, it's hard for me to do and I know about food and where to find the recipes.) That's why I wasn't surprised when our latest cooking class, "Quick Fix Healthy Meals" filled up within minutes. I teamed up with my dietitian friend, Maureen Doran, to teach the class. We work well together, I talk about the food and she talks about the nutrition, although at times we interject themes from each others' world, as we've been doing this for a while. The General Mills Wellness Committee sponsored the class--I'm an active comm...
